Yes, this is what every Filipino moms that I know's explanation. It needs to boil to evaporate the acid before you distribute (mix) it. Otherwise it will just have a strong and sour vinegar flavor
That is exactly true! There are time even if you don’t stir it and you don’t wait for the right time on boiling. It will still taste sour. Perfect adobo is when sour taste transform into sweetness. ❤️🙏 miss Mama too!
If the vinegar is distributed it makes it harder to cook off the potency it’s just easier to cook off the sharpness of vinegar if it’s in one spot. Lowering the heat let the flavor simmer into the ribs without overcooking the meat and allow the liquid to not evaporate :)

My mom died in 2019. Her sweet and sour pork and lumpia recipes were famous. I wasn't able to mimic her sweet and sour pork recipe but I almost have her lumpia! I have some of her other recipes from old text messages that I'm glad are still on my phone! Moms' recipes just hit different!

I’m vegetarian, and make tofu and edamame adobo all the time! You basically make the sauce first, let it cook, and then add in the tofu and edamame at the end until cooked through

Food is a magical thing I mean just yesterday Leah saying the Costco rotisserie chicken reminded her of mama like how cool! She prob wouldn’t remember her just based on her age and how our memories work, but the Costco rotisserie will always remind her of mama & that’s pretty magical!

(in my household, we marinade our pork/chicken in soy sauce, pepper, garlic and 3 tbs vinegar) There's a belief that, when you stir the adobo when vinegar is added the heat will react with the vinegar flavor in two ways. ¹if you stir: your adobo will have a strong, lingering acidic taste that isn't too pleasant. ²if you don't stir: the acidity will cook off gently, melding with the soy and ginger flavors, leaving a beautiful umami. I really feel like you added wayy too much vinegar Benji! 😅😅 quarter of what you added. Maximum!

If the vinegar is too much mix and heatead it may evaporate and so not do its game in the recipe. It s my supposition... So much respect for Mama s cooking! 🙌💜

Hi Benjie, actually it's a Filipino open secret😊. It has been passed on from our parents and grandparents generation. Vinegar before were not yet sterilized so to kill the possible bacteria we let the vinegar sit for some time w/o mixing and have it considered as "cooked vinegar" and will not taste raw as it may also affect the overall flavor of it. This also applies not only to adobo but other pinoy cuisines that uses vinegar, but now the vinegar are already sterilized so you can actually mix it, but it became a well known tradition that we still follow originally how it's done back in the olden days😍. And btw Mama's adobo looks bomb! and I would definitely try her recipe soon💗.

She used to make me laugh so hard when she sat the camera down with it pointed to the ceiling or floor and you could hear her voice talking to the girls. Judy you can make your own ghee 12 min in the insta pot on soup mode room temp butter. Taste way better but store bought is good in a pinch. So healthy for you instead of oil! Happy cooking!🎊

Yes don't stir the vinegar until it's cooked or else the pork will taste sour. I add also potatoes for extender. Always watching your very inspiring family vlog.
If you use pasteurized vinegar, you can stir it in because it is shelf-stable and the taste will not change anymore. But if you buy the homemade fermented vinegar (usually you will find them on the side of the road in the provinces), that’s the type of vinegar you do not stir in for a few minutes when added to a dish while cooking.

Yes don't stir the vinegar until it's cooked or else the pork will taste sour. I add also potatoes for extender. Always watching your very inspiring family vlog.

If you use pasteurized vinegar, you can stir it in because it is shelf-stable and the taste will not change anymore. But if you buy the homemade fermented vinegar (usually you will find them on the side of the road in the provinces), that’s the type of vinegar you do not stir in for a few minutes when added to a dish while cooking.
