    This is how I can peaches and like you, I do a heavy syrup. They are a treat for us and we make them last for a year until next peach harvest. They are so so good. Like you, I do 7 qts. at a time. I cut all my peaches in half then stick them in a bowl of cold water w/about 1 Tablespoon of Ball Fruit Fresh (found in the canning section) in the water. When I think I have enough to fill the 7 jars, I then take them out of the water and put them in the jars. That keeps the peaches from browning and they stay nice and yellow. Works great for apples when making pies etc. also. Great video

    Make time to put in fruit trees. You will not regret it. Put up over 100 pounds of peaches between last month and this month. We love peach pie year round, as well as peach ice cream, and just plain canned peaches.

      Usually two to three years. By five years you should be getting big crops.

    Also, you can make jelly using the peach skins. We don't use all the peach skins that we peel, just keep about 7 or 8 jars made for each year.

    We lost three fruit trees to borers this year. They had just started to produce. 😢we've never had borers before, so I didn't notice until it was too late. Fortunately we have lots of local fruit available for canning.

      @@valleyviewfarm1905 Sorry, fat thumbs! I meant borers. I've corrected it above. In case you're not familiar, they are small moths that look like hornets that bore into the bark/wood of the tree and lay eggs. The caterpillars then destroy the tree from the inside out. You'll see small boring holes in the bark and shellac-like drips that are hard. They enter through damaged bark and by the time you know you've got 'em, it's probably too late. :(

      I have heard of them, but honestly have never seen them, or the damage they can cause! I can’t imagine the devastation! I’ll be praying that they don’t kill any more of your fruit trees!
