to me its like going the butchers really, but everything is fresh and still alive well mostly lol.. fish head tbh im not found of it, doesnt look appertising and i think ive tried the cheek and someone tough guy ate the eye ball.. i was like yeh , not great, but chinese is all about not wasting anything, you see cultures that kill the food also respect the animal or food. that sounds crazy to someone who gets it packaged, but thats the part people are missing out, if you have to do the killing or see it, then you learn to respect its life and be grateful and thankful for it, cuase tbh its sad animals do understand and feel.. but they taste to damn good lol.. eventually one day i will quit meat but long way away yet..
i mean if people dont realise burgers sausages chicken nuggets all the stuff people love in teh west, are made from these heads eyes balls and bits people dont want to eat, so youre eating it anyway. chinese are very no nonsense so our thought or their thought is more like grow some balls ffs. its what i always was told when i as a kid scared to try something.. and tbh now ill try anything other than worms, bugs or anything slimey like that,,, spiders, cats and dogs is a defo no.... and rats or bats.. what makes it rediculous about the virus lie, is chinese are very well aware which stuff is lets say dirty,,, stuff like rats and bats, bugs ect pests, most wont touch them, they carry diseases.. if they were really poor 40 years ago maybe had no choice then maybe but it wouldnt be a choice .. i mean people in china are scared to eat meat from alot of the street vendors which are now kinda illegal, cause they worry it could be rat meat.. chinese is a food culture very aware of whats good and not. but wastefulness not in the sense of left overs at restaurants but when an animal is killed respect it and use it if it can be used.. and textures tastes everything has different textures, is like french gourmet chefs, theyll use all kind of strange stuff for the texture and effects. Chinese is a VEry VEry food orientated culture..
im glad olli kinda understands more now hes been there , cause i dont live in china but ive been around chinese family where we ate stuff like crabs lobsters, that had to be butchered, i mean its only really last 20 years or so this stuffs more mainstream in the west.. like 12 year old kids can gut and prepare a fish in china.. id love to see one of my mates even try without screaming hahahhaha. from a western perspective of it being cruel or looking unclean.. to chinese point of view its like very pompous and weak slightly ignorant too... like you can tell alot about a person by what they eat, and what they are willing to try... those that stick to one dish and never try anything, i garauntee you they are very selfish and ignornat people.... its psychologically proven with people with eating disorders..
lets not judge each other aye and learn to understand one another.

    • @judithafholland
      @judithafholland 3 года назад +6

Respecting the animal by using every part was very much the belief in rural England, exactly as you said. I think that these days most of the parts rejected by humans go into pet food. Pigs ears & rolled up raw hide are on sale as dog chews.
In my childhood there were few urban house pets & no commercial pet food. Dogs & cats were common in the country & had "jobs" usually controlling vermin, They were fed scraps but were very healthy, rarely getting sick , lived to ripe old age when wormed regularly. Probably much healthier psychologically than cooped up indoors, getting bored.
The problem for us, is that the meat on sale is the more expensive cuts, rapidly becoming less affordable, & younger people don't know how to cook them now.

organs though are nothing, like liver kidney get that all in the west and tripe, i love tripe chinese cantonese style.. but British ate tripe..
also if you ever seen some traditional british dishes, ones a pie british are pastry pies pasties ect... its a fish pie, where its baked with like 10 fish heads poking out the pastry lol.. if anything that doesnt look appertising. i forget what its called.. but eat alot of it down south.

Chinese vs Western food culture differences~ chicken breast meat is disliked by Chinese because it is chewy, sinewy and lack of texture as compare to wings whereby there is skin n fats, meat and chewy bones/tendons. Marinates r easily absorbed into the wings, that makes it more tasty.
Only certain types of fish, whereby the fish heads are a delicacy and the degree of “freshness” is very pertinent to the making of a fish head dish. There r 2 different ways of gourmet in making~ a deep fried head vs a steamed fish head. In the deep fried type gourmet, the delicate fish “bones” similarities is so tasty n crunchy as snacks~these are area around the mouth n side covering the gills, fins. Steamed fish head dish is “sauce” based type dish~ same as b4, the area around the fish mouth will have gelatinous fish fats. A combination of deep fried then simmered in sauce. Parts like fish “cheeks” is in fact the most tastiest meat because it is a “living” muscle as the fish breathe thru’ gills. This meat is tender n soft n almost “melt” in your mouth. Parts of meat along the fish body~fillet is like chicken breast meat to Chinese=muscular meat that is coarse meat and not desirable. Texture differences is very important to Chinese cooking.

It is also the same for Chinese; chicken drumsticks r the best.
For fish head curry; very simple- fresh fish head n fresh vegetables. Clean the fish head carefully( the trick is after cleaning, mildly coated the fish head with corn starch/any starch for 10-15 mins and rinse off- it take away the stank/unseen particles.) marinated if you want and steamed to cook. For the curry- just ask the “spice-shop” for their version of masala for seafood/fish curry. Know to fry the mixed spice to release the fragrance of the spices, add little water n cook fish head n coconut milk to simmer n add vegetables to cook, add salt to taste. Know there there r versions of sweet or salt curry. Curry for meat differs from seafood differs from vegetables.

In the west they eat "recovered meat" which is made from the slurry (called white slime) blasted from the bones left over after the good bits have been taken off and then forced through a sieve to remove the bones. The psste is then mixed with some chemicals and flavouring and reformed into "chicken slices" or "ham" or used in sausages, etc. While you might imagine you are buying an actual boned leg of a pig, often they are really made from cuts from several different animals that are stuck together in a factory. Next time you buy a packet of chicken slices, check how much chicken is on it. Probably less than 90%. Chinese scorn such abominations, but is staple for many westerners. Disgusting!

Hi, Oli, thank you again for this very short and sweet but informative video clip. In Seremban, Malaysia, where I grew up, there is a wet market with a similar set up. Well, it's almost identical because of the Chinese community in this part of Malaysia. I'm really grateful that this clip is again under 15 mins, just right for me to share with my schoolmates of Chinese descent but who do not read or write Chinese and also with my relatives in Guangdong. Love the way you present us, our culture and our homeland to the rest of the world (even though I'm Malaysian.) The parks are awesome, indeed. I love this wholesome video (and handsome host). Thanks again for this truly well done job. Keep up the good work. Regards, Jeremy 趙耀勝 (赵耀胜) p/s Don't forget to speak and sing in Chinese. 🎼🎵🎶🎤😜

It is heart-breaking for me to be treated as an outsider and second-class citizen, called a "pendatang" and told to go back to China if we don't like it here, by no less than leaders of the country, not some unimportant insignificant member of the public like me. When I was a kid, my parents and teachers taught me to love my neighbour and never to be racist. We were taught to love our country which we all still do and we sang "Negaraku" meaning each word with all of our hearts. However, as we grew up, the leaders of the ruling party showed by example that this country is governed by racism and lawlessness. Please do not reply. Good to show the facts. But don’t even think of convince those who ask those questions. Ninety percent of the occasions, they know what they are talking about and they know the answer, they just pretend they don’t. By the way, Europeans eat all sorts of shit and I have tried many weird traditional things… Not a fan of exotic stuff that’s gonna end in my stomach but it’s a good way to communicate extensively. People all over the world eat all sorts of things, some even locally exotic things, as opposed to “imported”. Only losers enjoy stereotyping others with very rarely happening things.

Nice - just one comment. I'm not sure why people get so hung up & judgmental on different places having what might be deemed as exotic in their own countries. People eat horses, rabbits, snails, &c + various wildlife (game) & I'm not so sure why it is then not OK to eat snakes or dogs [excepting vegetarians & vegans]. I believe the latter are certain breeds reared specifically for the (dining) table.
We also need to make allowances when food resources are limited down to subsistence levels - of course it's understandable that people will find creative ways to consume as much of the animal as possible - isn't this also to respect the animal that has had to be killed to provide nutrition? Even extending to using inedible parts for other uses like furs, tendons (for gut type string] & so on.

It wasn’t advertised or anything, so she was probably supplying a select few. It was undercover in the back of her blue trike.
Also, I teach primary students who are not even twelve, so when they say they have eaten snake - it is not ten or twelve years ago. The Hunan restaurant in Futian was around 2019 - when I was sat near the crate of snakes. I have no judgement on the food whatsoever- I am just saying what I have seen.

Not surprised at all that the older generations still yearn for snakes and such. They used to have snake cause in those days that's the only meat.
Back here in borneo where I live, snakes, dogs, bats, and just about anything they can catch is a special meal for most locals. Today though the young generation cannot fathom eating any of these. I still remember that I was once offered dog meat at a home of an east timorist who moved here for work some 10 years ago. I basically denied it.
Yes there are many asians in and around asia proper who were poor and they do eat anything for survival then.
When in Thailand I did see dog meat and cat meat offered in streets and alleyways. They eat them. But that was also more than 10 years ago.
So I guess basically in the old days most of asia eats dogs, snakes, bats, cats, anteaters, monkeys & monkey brain ( this was in Thailand), but today it's a dying food source, for the better too.
As we the populations in this world are moving forward to the future this habit will be only in the history books, and for good I hope.

One of the reasons modern butchers use the methods they use is for quality. When an animal is stressed it operates in its fight or flight instinct mode, which or were healthy tissue is second to the immediate need to survive. The result is meat lasts longer because modern methods do not give the animal a clue its about to die. While the stressed animals meat will rot sooner and faster as the biological defense against rotting has been used up and not replaced. This is not the case with Chickens most of the time as they are not concerned when they see their neighbor die that they might be next ... their not the smartest of animals and cannibalism is not beneath them. But, if they are caged near animals who would eat them, they will spoil much faster.
Modern practice for cattle is to design the stall where they are to be butchered to look exactly like the stall that they are fed in. The cattle walk in expecting food ... killed instantaneously before and without the knowledge that they are going to die. There is a big difference between beef that is 24 or even 12 hours old between the methods, and if the meat is going to be marinated to improve the flavor a noticeable difference in quality.

I'm not the slightest phased by the several Chinese wet markets I've seen on video. I have never seen a single fly & wonder how they do it! I'd buy because fresh food is much more nutritious.
I once lived in an area where I could get fresh fish off the boat. I can't stand fish from the fishmonger now - it has an "ammonia taste".
However I was very angry to see footage by the anti China brigade, showing filthy conditions BUT there was a single written sign and the script was definitely NOT Chinese - possibly Vietnamese or Thai.
Re. older generations eating "strange things". I wonder how much was because of the paucity of food. I bear in mind that after the fall of oppressive imperialism, there was civil war, then Japanese occupation brief return to civil war, & initial failure to update agricultural methods to support urbanization.
BTW wishing your Dad all the best. I miss him but his health & recovery are far more important than educating & entertaining me.

I am concerned because these false beliefs tend to be unamenable to rational discussions, much like the propaganda before we invaded Afghanistan & Iraq on false pretexts. I recently found that "Fermube" shares my concerns.
In fact the Chinese "wet markets" aren't much different to the English market stalls which sell fresh food. We just don't sell live sea food from tanks, & there are only a couple of stalls per market, these days.

@人杈 I'm sorry I can neither speak nor read your language, so I can't understand your comment. Because of knowledge of infectious disease control I know that no other country in the world has approached China in your excellence to identify a new virus, share information with scientists globally, control it, & eradicate it from your country. This was an amazing feat, which needed appropriate rapid reaction by central government, & a people who were prepared to make many personal sacrifices for the good of everyone else, including the rest of the world because by eradicating it so, it could not mutate in your country. You have a wise government & well educated people. It is highly commendable to consider the effect of one's actions on others. You have benefited & shall continue to do so. You won't have the large numbers of people with "long Covid" that we have. My personal opinion is that Covid did not start in China - there are too many facts which do not fit this hypothesis. I wouldn't like to say where it originated. To me, what matters is how we deal with it. Western governments have been woefully lacking but can not improve while they spend their energy blaming others for their own short comings..
I am personally grateful to the English speaking people of Wuhan, who in the midst of their own suffering, posted videos on here to warn us that it was serious, when our governments told us it was "just a bad 'flue". They showed me how to protect myself. They saved my life.
As for my other concerns, I think I have learned enough about China to be confident that China has no intentions whatsoever to be aggressive. It is the West which is being dangerously provocative at times. I strongly believe that China will only be defensive, & then when all else has failed.
I don't think that China is some sort of Utopia. You have your own problems & frustrations as we have ours. I DO think that we could learn a lot from the things you do well, so we could improve our own nations within our different systems. I strongly believe that whatever the nationality, we share a common humanity, which should always be respected. From this respect, I come to a Chinese perspective of non interference in the internal affairs of other nations.

@@judithafholland Thank you very much Ruth. Your support is so important to us in the fight against this mass anti China propaganda. On RUclips it gets to a point that anyone speaks truth about China or promote Chinese culture will be attacked or labelled cop bots but I always believe there are people in the west that will see through the lies as Seeking truth is human nature and it is our duty. Same as you I also appreciate people speaking English posting and sharing stories about real China. I do hope more of my fellow Chinese learn and command English and tell our side of the stories as western media is dominant in English and not many people can read Chinese. There’s a saying “Until the lion learns how to write, every story will glorify the hunter.” The situation is similar as many people in the west are blinded by the media.

      👍🏻👍🏻👍🏻
My views is based on what i can see on the "surface". After all, there is no way one can see the "soul" of any given city by just visiting the place for a couple of days.

The longer I watch this channel, the more I feel that you are really a biological father and son, able to see your father's feelings from you, without using subjective bias to see other cultures.I think as a father is a successful place to be able to pass on their good qualities, while some fathers will only let the bad side pass on,No offense, but I envy your father and son
