    I am attempting to ferment for the first time and your video is extremely detailed and informative. I have been reading that the lids need to be burped to avoid explosions. I am extremely nervous about that. Do I need to take any extra precautions if I don’t use the pickle pipes and instead use the flat lids that come with the mason jar? Thanks!

    Nice clear instructions Donna! I've wanted to give fermentation a try but I haven't been brave enough. I stick to "refrigerator" pickling, one jar at a time. Should I get up the nerve to try fermentation, I have some jalapeño coming along in the garden that are just about ready. We'll see what happens. Thanks for the info!

    I’ve done well with the sour kraut and the jalapeños, but I have had zero luck with cucumbers 😞
    .... and hey I agree I used a few different lids and techniques along the way and found the pickling pipes worked best .... and I also went with the off brand ones 👍🏻

    If I wanted to do the Mexican spicy carrots and jalapenos together, how much salt would I use for that? I know you said the salt ratios are different for carrots and jalapenos.

    Well, so I tried fermenting jalapenos and I have questions/concerns. At the end of 10 days, should the mix be completely dissolved? I had a little cloudiness and the garlic had a strange blue'ish tint. I keep the temperature in the 60-72 range with a few short exceptions. There's no foul odor and the peppers taste okay, but she ain't pretty. Any ideas or suggestions? Thanks. PS. I really like the mix

    I think coriander seeds give ferments a really nice flavor but don’t eat them on accident bc that isn’t so great lol

    Do you store the leftover brine in the refrigerator?

      No, use the brine in the gallon jug at room temperature. However, I store the left over brine after I have used the peppers in the refrigerator.

      I did a similar video on cucumbers making pickles, so I used the same intro and brine instructions from the cucumber video. However,, the rest of this applies to jalapenos. Hope you can try it soon.

      I like hot peppers and think the heat on these is perfect. However, it depends on the variety of jalapeno you grow. Many varieties are much hotter than others. Here is a little information: ruclips.net/video/AHw9oJJZjI0/видео.html

      Pickling is the process of preserving or extending the lifespan of food by either anaerobic fermentation in brine or immersion in vinegar.

      I had to look this up. While technically she is correct, I found the use of both terms confusing. I wasn't sure if she was using vinegar or not even from the title.
