  • Potatoes go through a series of potentially damaging system of diggers, conveyor belts, shoots, drops and sorting prior to bagging. Damage due to bruising is not always detected until much later in storage or in the shops. The Potato Museum collection has one of the first E-potatoes developed in the 1980s in Idaho. Tom and Meredith also report on the evolution of efforts to develop an artificial potato that will spot all the danger spots in the handling process.
