I crocheted a doll for my daughter years ago, and I felt the same way about it! lol I can't imagine doing it all in knitting, and in intarsia at that. But your daughters will love them, I'm sure, and that will be a precious memory for them.

Eye of Partridge definitely gets an A+ from me as far as pretty AND durable; I also like a slipped stitch heel as my socks usually wear the most where the ankle rubs against the back of my shoe. I also knit at a fairly tight gauge size 0 needles for extra reinforcement
If you knit your doll's sweater in the round instead of having buttons on the back, it will be extremely difficult to get it on and off the doll. Regarding your cardigan, they gave you good advice, I always knit the neckline before finishing the sleeves. The neckline can drastically change the fit of your garment and can alter how you decide to finish the sweater
Thanks for the heads up, I actually ended up knitting the doll sweater flat until I split for sleeves, so now it's a little v-neck, for that very reason.

I often make my tops too short as well for the same reasons😂 usually I need to go back after I've worn them once and add more length
