My mom and I just tried the water test. Then we used a hand mixer/whisker to aerate the dough and tried the test again. The dough floated in water! The vadas came out great.

While grinding the paste if we add ginger and green chillies at the end, it tastes great. MY grandma used to add some butter to the ground mixture for the vadas get more crispier....
Hi chef! Every time I made vadai it always turned hard. My mom makes the best vadai soft n crispy n it was she who taught me to make them. I could never understand why my vadais wouldn't turn out like hers! But then stumbled upon this video and ur tips helped me!! I never beat the batter with my hand and always just used a spoon or a spatula to mix!!! Thank you chef! Love you! My mom too was surprised to eat soft crispy vadais that I made... :)

Dear Vahchef, You can perhaps suggest methods found in non-Indian kitchens, too. Like using oven for biiriyani or a cake mixer to incorporate air into the vada batter.
I tried making vadas a few time before watching this video and they were hard fem inside..... your video helped me in getting perfect vadas that are soft from inside and also less oily.... you are a great help and inspiration to amateurs like me....thanks
