    I just love Indian food , and was told by my doctor to eat differently , Indian cooking fit the bill.

    Great! Made them from mix and they were heavy - now I see the trick. Wonder if they are any good with a little bit of dried methi or curry leaf chopped?

    I prepared Vadas looking at this video....the Vadas came out so crispy and the look and taste was awesome.... Vahchef is a wonderful cook.

    thanks for your tips on how to make the hole in the vada..i did mine and it was successful. and it stayed soft for a long time. your tips on the earation too was good. posted it on my blog.

    My mom and I just tried the water test. Then we used a hand mixer/whisker to aerate the dough and tried the test again. The dough floated in water! The vadas came out great.

    I like all ur videos and the way u explain. So simple and great. I saw this video of making medu vada. I have a suggestion. While grinding the paste if we add ginger and green chillies at the end, it tastes great. MY grandma used to add some butter to the ground mixture for the vadas get more crispier....

    Hi chef! Every time I made vadai it always turned hard. My mom makes the best vadai soft n crispy n it was she who taught me to make them. I could never understand why my vadais wouldn't turn out like hers! But then stumbled upon this video and ur tips helped me!! I never beat the batter with my hand and always just used a spoon or a spatula to mix!!! Thank you chef! Love you! My mom too was surprised to eat soft crispy vadais that I made... :)

    U r my guru Sanjay! I followed this to the point, and made amazing vadas... tasted so authentic. My dad finally liked some traditional dish I made. He always complains that I do not make traditional south indian dishes... Did not add coconut though... Can u please teach me Kakinada Kaja recipe...

    Dear Vahchef, You can perhaps suggest methods found in non-Indian kitchens, too. Like using oven for biiriyani or a cake mixer to incorporate air into the vada batter.
