    My dad is Jamaican. So I grew up loving plantains.
    I bought some when I was in college and left them on the kitchen table to ripen. My rooommates, being white suburbanites and having no familiarity with any other variety of banana than the Cavendish, THREW MY PLANTAINS IN THE TRASH, assuming they were overripe and rotten.
    I'm still not over it.

    The ae ae banana is now one of the top variegated plants that made its way into the plant craze lately here in Malaysia, selling for sometimes over $250-300 for a small sucker

      *As a lifetime member of the California Rare Fruit Growers, I've grown 14 varieties of bananas here in SoCal for decades.*
      *The reason your American Super Market bananas are "boring", is because they are picked [Green] and lack full ripened flavor.*
      *Mostly grown in South America, they do this for safe transport, destined to store in big local warehouses.*
      *When orders come in, the load going out is [ethylene gassed] which triggers ripening to occur in a week.*
      *The [Grand Nain] variety, is the dominant commercial banana here in America, due to it's high yield, and large size.*
      *Cavendish are only about 5" in size.*
      *[Dwarf Cavendish] a favorite of mine, is a smaller plant, that can be weather sheltered, and still yield a large rack. (approx. 200 bananas)*
      *To enjoy the best tasting quality bananas; Grow your own, and pick them ripe off the plant as they ripen. (I recommend Dwarf Cavendish)*

    “Deal with it!” 😆 I personally debunked the whole business of opening a banana at the wrong end as opposed to the stem end. There is no advantage in doing it that way. In fact, it damages the fruit. Beautiful plant, by the way.

    whenever I make ketchup, I let it simmer for hours instead of minutes. The longer you let it go, the richer the flavours and the less you have to blend it. Try it :)

    Jufran is a signature ketchup of a certain restaurant in the Philippines called max's fried chicken. As the years went by, Max's produced their own banana ketchup for their iconic fried chicken

    you describing banana flavors suddenly makes it all click. used to be strange when my banana tasted more citrus-y or sweeter in a different way, but i see that's just bananas being bananas and genes. they are my favorite fruit. i'd love to try the varieties that aren't in the sto'. i've only ever had grocery store nanners.
    also, it seems many of our fruits and veg taste like other fruits and veg at different life stages. wonder what that says about the way plants, animals, the universe works.

    In Hawaiian the banana is actually called aʻeaʻe - the ʻokina marks and pronunciation make a difference in the meaning.
    Also, have you heard of another Hawaiian banana variety - the maiʻa hāpai? This is a type of banana that occasionally grows inside the stalk of the tree, thus the name “hāpai” referring to pregnancy.

    The saba banana is generally used for cooking in the Philippines but sure,it's not that bad eaten raw.Ripe saba is used for sweet desserts or fried etc. while unripe green saba is boiled and eaten with savory salty meals,particularly in the southern Philippines, as a staple or an alternative for rice.For your banana ketchup, you can add some achuete or annatto powder(which is red and organic) to make it more palatable.Also in Mindanao there's a variety of dessert banana called lakatan,which looks and peels just like the striped polynesian one when really ripe(bits of peel sticking to the flesh)but without the stripes,also with yellow/ orange flesh.They could be related varieties which is not surprising and entirely possible,given the Austronesian ancestry of Polynesia.

    Years ago I went to a pick your own apples in upstate NY. It must have been a perfect season because the apples were HUGE. The larger ones were grapefruit sized and I mean the large grapefruits. I'm not sure of the variety but they tasted faintly of bananas. Now I see you tasting bananas that taste faintly of apples. Odd that.

      When I'm in the Philippines, I have banana catsup. It don't seem much different than tomato catsup - till I go back to the US and have tomato catsup again. Once used to the banana catsup - the tomato catsup tastes a bit bitter.

    normal cavendishes can be smushed flattish (or cut to short cylinders and cooked on three sides) and cooked on a pan. using a nonstick pan and no oil makes a nice diet dessert bc the sweetest like you said for your banana increases greatly plus those caramelized and toasty flavors. i also had used some type of asian banana my mom had brought and she said they take super long to ripen, but being impatient i ate some but it was just barely sweet. steaming them didnt help but pan toasting was very delicious

    Banana ketchup as a starter for bbq sauce is amazing! I'm also a huge fan of banana spaghetti sauce. If you have a Filipino market, go right away!

    In Australia, they sell banana ketchup in most good asian supermarkets (usually a philipine version, but have seen a vietanmese version). The ones here are a dark brown colour (like yours but darker), haven't seen a red coloured version. It has a sweet, spicy banana ketchup flavour.

    I actually have a variegated banana plant as a houseplant I’m not sure if it’s this variety though because bananas will grow but not often fruit in low light.

    Maybe consider getting an anodized aluminum pot for cooking, especially if you cook a lot. Makes both cleanup and cooking way easier while allowing you to use less oil.

    OMG JUFRAN BANANA SAUCE IS THE BEST!!!! it's like lightly spicy catsup and is a much better base to mix hot sauces with than regular catsup. I love it on egg rolls, burritos, with eggs, on a burger, anywhere! You can often find it in the Asian food section of a well stocked Safeway, otherwise you need to order it online...

    The grocery stores where I live have banana ketchup in the “international foods” sections. The bottled stuff is bright red, I assume due to added food coloring.

    Ketchups were made from a variety of different things before the modern tomato ketchup. It comes from China and was made from mushrooms and all kinds of things. Banana ketchup isn't all that strange when you consider the history of ketchup.

      Yeah! I've made a banana bread a couple times since miami fruit started sending me boxes. Its always been a mix of varieties but all have been really good with a nice strong banana flavor.
