Making Brownies From A Cacao Fruit

- These brownies should be called "lava cake brownies." They're the perfect hybrid between a crispy, crumbly exterior and a gooey, chewy interior. I am not kidding when I say that these are, hands-down, the best brownies I have ever had. And you can make them, too. You can just start with cocoa powder instead of cacao pods! Recipe below:
Ingredients:
1/3 cup cocoa powder
1 1/2 tsp instant coffee granules
1/2 cup + 2 tbsp boiling water
2 oz unsweetened chocolate
1 stick melted butter
1/2 cup + 2 tbsp vegetable oil
2 eggs + 2 yolks
2 tsp vanilla extract
2 cups granulated sugar
1 3/4 cup all-purpose flour
Salt (to taste)
Cacao nibs (optional)
Chocolate chips (optional)
1. Combine cocoa powder, coffee, and boiling water and blend.
2. Chop the chocolate and add to the bowl, whisking again until smooth.
3. Add melted butter, vegetable oil, eggs, and vanilla and blend again.
4. Now add sugar and whisk once again.
5. Add flour, salt, and any additional ingredients (nuts, chocolate chips, etc). Whisk one last time.
6. Pour batter into a greased pan lined with aluminum foil.
7. Bake for 45 minutes at 350 Fahrenheit (176 C), but start checking for doneness after 30 min.
8. Cool, cut, and enjoy!

I’ve made it at home countless of times. 1 year is plain bs. 2 weeks is sufficient for a slight flavour, and 1 month for a fairly intense flavour. This guy is exaggerating to seem cool, imo. Try it for yourself (1 vanilla bean with its insides scraped into a jar of a 750 ml capacity. 500-600 ml of a fairly high quality white rum. Wait for at least 2 weeks, shaking every so often. Also, 500 ml are something like 17 ounces; 600 ml are 21).
I looked it up and it said you should wait at least 6-12 months for it to fully ferment and gather flavor

After looking over things myself many seem to agree that 2 months is the usual waiting time for the fermentation process.

It seems to me you are, just as him, trying to exaggerate the preparation process. There have been many that recommend waiting 6-12 months for the fermentation though none has recommended as little as 4 weeks, the closest being 8.

Hey Nick, Instead if adding water to your brownies, you can put coffee in them. Especially if it's a chocolate brownie, it will make your brownies have a even richer flavor, I actually tried this with my daughter, she really enjoyed it and we haven't been spending much time together cooking so this was a perfect timing!! Thank you Nick, I will look at more of your foods sometime, and dont stop cooking!

These brownies are way too sweet. Also, my edges became too crispy while the center stayed too soft where I made a big mess when I tried to flip it like he did. I tried the lava cake recipe and they were super good so I really wanted this to be good. However, it does not compare with the recipe I got from the food network. I would not recommend this. Definitely try the lava cakes though.

I once visited Ecuador where I got to go to a cacao farm and got to try it. Fantastic experience!
I just made these at home and they are amazing!! I added some hazlenuts to add an extra kick. Its nice and fudgy and but crispy too. Really love your vidoes mate! Keep it up!!

I own a bean to bar business and that is not how you make cacao powder from the bean. What he made is equivalent to “coffee grinds”, it won’t break down unless you extract the cacao butter and use a high powered fine mesh grinder or he could make chocolate by stone grinding the nibs. But he didn’t separate the shells or ferment the cacao…
I wonder what would it be if he makes a series when he makes chocolate from cacao, grinds flour from wheat, extract oil from olives, rises a chicken to have eggs... to make brownies.

He uses my exact recipe except i use store bought cocoa powder and instead of vegetable oil i use peanut oil and instead of two cups granulated sugar i use 1 cup granulated sugar, half a cup brown sugar, and half a cup coconut sugar. I encourage you to try this with a real cacao pid. Its magical
