I'm a vegetarian but this represents culture to me. Being my mom coming from Bardhaman (She's not Bengali, just happens to come from there), I have experienced Bengali street food and it's an enriching experience which is not easy to forget, the puchkas, ghugni, chaap, bara bhaja, jhaal muri etc. Food clearly defines roots to me and I'm so proud to have known this cuisine. Kudos to you guys for transcending this emotion to the newer generations and keeping it alive. As long as we keep cooking, the culture is here to stay!

Just a little addition.. after you soften the shutki in warm water you can slit it slightly and take out the middle bone.Then you may grind it. That makes it less chewy. Wonderful to watch your videos.as always bang on!

I couldn't believe when I first saw the thumbnail... Being a proud Bangaal and from northeast, I'm an ardent shutki fan. We have 100s of types of shutki and double the amount of recipes. That being said, I just eat this variant and few others. We cook with crushed onion garlic chillies and little ginger along with charred tomatoes and paste of soaked dry red chili paste as it's preferred 🔥hot ... Try with charred tomatoes as it adds a distinct flavor to it. Also if you soak in hot water, it'll reduce the smell

I m also from ctg, and It's true that the process is very different from how we prepare sutki.Also people of west bangle aren’t big sutki eater.It’s quite new to them.

I stay in Assam but I have many friends in Kolkata who love eating Shutki and Shidol. I hope you have tried other recipes as well. If not, think of giving those a try too. Especially Shidol er bora. The chottogrami side of my family loves loittya ‘shukti’ as they call it, while the barishali side runs away with the smell. It’s sad that now that my grandparents are no more this isn’t cooked in my home anymore. Maybe I can try making this once.
My paternal side is from Chottogram.. we love lotte shutki in any form. But we love sidol also, as my maternal side is from syleth U can look for d recipe of dim shutki.. one of d specialty of Chottogram

This is nostalgia food...deeply emotional, takes me right back to my childhood . Whenever someone wants to taste food outside the traditional restaurant menus and taste the deep roots of our food...this is one of the dishes! I still use my stone grinder to make shukti bata !

I really think it is necessary to say. Thank you for representing a section "bangals", who have been nothing but misrepresented most of the time. Food speaks volumes about culture and communities more than anything could. And shutki recipes which are currently going obsolete as most apartment complex are not ready to bear the pungent smell, it feels nice that your channel decided to focus on it. I have grown up eating shutki, even though initially I couldn't take the smell,not it is something I nag my mother to make more often. My baba who is a ghoti, earlier didn't like eating it, but never would he tell us not to make it. Yes, the ghoti-bangal debate might seem like a fun banter, it isn't in reality. Seeing some comments it's rather disheartening that people still think it is alright to use derogatory terms to talk about an entire section of bengal. A reality check it is not. Do keep making such videos cause food goes beyond boundaries of caste, class, religion, community, which India is made of. Maybe Tagore's idea of "Bharatvarsa" is something people are still not used to. :')

Your preparation of Shutki is amazing, I have had all forms of it tasted and I am a huge fan of all your preparations.. If the dry fish is first roasted or fried in and then grinded with dry red chillies, garlic and onions in a grinder / in 'shil-nora' and consumed with rice, that taste of the same is unbeatable.

In our household, we don't usually use Nigella seeds, tomato, cumin, coriander and ginger for cooking dry fish or shutki maach as you call it. We simply use onion, garlic and the two forms of chillies which enhances the texture but retains the original flavour at the very same!
It's really sad that people avoid eating these just because of the smell... Shutki is love ❤️ Especially shidol shutki 🤤🤤.. Nothing beats shidol shutki, though lotte shutki is more common in Kolkata..

If the dry fish is first roasted or fried in and then grinded with dry red chillies, garlic and onions in a grinder / in 'shil-nora' and consumed with rice, that taste of the same is unbeatable.

In our household, we don't usually use Nigella seeds, tomato, cumin, coriander and ginger for cooking dry fish or shutki maach as you call it. We simply use onion, garlic and the two forms of chillies which enhances the texture but retains the original flavour at the very same!
You're from North East India? If yes that's how we in North East make dry fish we don't add masala because it lost the flavour

Awesome recipe!! 😍 I must admit that I was initially under the impression that shutki is more of a regional delicacy confined to the eastern parts of Bengal, such as in Sylhet etc. I'm intending to try this recipe in my own kitchen as we also have a tradition of drying fish in my country, which is also an acquired taste here 😂 having said that, I always look forward to your videos 😍 I always learn a thing or two about Bengali culture through them...keep it up!
