Once I came abroad, and once i found imported Loitta here, I learned to cook Loitta Jhol. I would piece up the fish in portions, and মসলা কষানোর পরে মাছে হালকা পানি দিয়ে done. Wont touch the fish since it will break if stirred. এরকম ঘাটি মাছ আমরা খুব একটা খাইনি। two more things. We never salt Loitta when we cook it. Normally, বাংলাদেশের লইটতা সমুদ্র থেকে আসে, অইটা অনেক নোনতা থাকে। we also loved battering Loitta and frying it. In fact, that is the most popular way of eating Loitta in Bangladesh. You can also add chopped coriander leaves(dhonepata) for an awesome flavour taste.... That takes the dish to another level.... do give it a try once... But make sure you turn off the gas add the chopped fresh leaves mix it and cover it to steam it for 3-4mins....
