Freeze the filling for at long as you wish. But freezing the finished product is not so good. I would recommend to half cook them, fully defrost and then finish cooking if you must freeze them.

That's what I thought too! I'm not from the middle east but I have tried two versions of spinach pies/fatayer before: one with tomatoes and one without. The one without tomatoes tasted much better. I have been looking for an authentic recipe for two years now but I still haven't found one
I’ve tried a few fatayer recipes on RUclips, ones that have more views. This is the best one. It makes the softest fatayer. Thank you.
