I've eaten one raw, because the deer were eating them and I wanted to know why. It was fine, I can see how roasting it and removing the flowers would make for better texture. Plus what isn't improved by olive oil and garlic!

When I was young I would go fishing with my dad and we always had sunflower seeds. And for two weeks during the summer I would get to stay with his parents and again, sunflower seeds. I don't eat them now as I watch my salt intake but I do like the 'peeled' ones on occasion. Good memories. When dad passed, I placed a fishing lure and a bag of sunflowers in his casket.

Quite interesting. Someone said once the buds could be cooked to be like artichokes. I don’t know why I never tried. Also, since you have gas range you could singe it before adding the oil, to get roasted flavor, then add oil garlic, cook it in a covered skillet in very low heat. A sprinkling of paprika and rosemary you add the scent.

I did pretty much what you did, made a vinegar, spread on top, wrapped in tin foil with a small base of oil in the wrap. Honestly, the taste was freaking great. I thought it looked like broccoli and the seeds were all white under the yellow flower buds. Thanks for the video and teaching me a new great food!

We called them Polly seeds back in the day…the 1970’s. Everyone in my neighborhood always walked around with a big bag of David sunflower seeds from the corner mini-mart after school and on the weekends. This was pretty much an every day thing. Just the salted ones. Eventually they came out with a barbecue flavor that was really yummy and then after that ranch. We didn’t eat them because we’re hungry, we ate them just because… you put a small handful in your mouth and use your tongue to push the seed between your teeth crack the shell split the shell out and eat the seed. Once you ate that hand full, you just pop another handful in your mouth. Our mouths were like fine tuned equipment. Just pop a small bunch of seeds in your mouth and your mouth does all of the work. No hands required!

I would think roasted artichoke for the base and inch of stem. I'm sure it would love about 5-10 minutes on the grill after oven roasting then re-drizzle with melted butter, olive oil and garlic before serving. Salt and pepper to taste. That's how we do the artichoke here, split with aioli on the side.

I eat them like my country uncles did when I was a little girl. Put a few in at a time and get all the good flavors or even just salt off then crack the shells, spit out the shells, and eat the nuts. I have a large produce garden as well which includes two different sunflowers this year instead of just the Russian variety I planted last year, which was great too! I can’t wait to try cooking and eating the whole thing.

One suggestion - nitrile gloves are a great kitchen tool. If you had had gloves, you could have massaged the garlic oil into the head (without getting smelly fingers).
Also, if you can shim or otherwise reinforce your cutting board so it doesn't move or flex while you're cutting things, your experience will be far more enjoyable IMO.
