Quick question: did you add a Leslie speed controller switch onto the edge of the volume pedal ? I can't really tell rather his volume foot or left hand is hitting the Leslie speed changes.

That's because the singers are taking the place of the melody freeing him up to add certain changes. I'm sure if he were playing with them live he would play slightly differently but this is a demonstration of musical skill.
