    Chef Ryan shares with us how to make gulmuchim and guljeon, or raw oyster salad and oyster pancakes. Plump oysters are seasoned with sweet and spicy sauce and combined with crispy slices of Korean pear and cucumber to make a refreshing raw oyster salad. For oyster pancakes, oysters and chopped scallions and chilies are coated in flour and egg batter and pan-fried to a golden perfection. Enjoy the fresh and savory flavors of seasonal oysters to work up your winter appetite.
    [Ingredients]
    *Gulmuchim
    100g Oysters
    1/2 Cucumber
    100g Korean pear
    1 Garlic clove
    2 Scallions
    1/2T Soy sauce
    1/2T Vinegar
    1T Korean red chili flakes
    2t Honey
    2t Sesame oil
    2t Sesame seeds
    *Guljeon
    100g Oysters
    1 Red chili
    1 Green chili
    1 Purple chili
    2 Scallions
    2T All-purpose flour
    1 Egg
    2T Cooking oil
    *Dipping Sauce
    1T Soy sauce
    1T Vinegar
    [Directions]
    *Gulmuchim
    1. In a bowl, combine 1 clove of minced garlic, 1/2T of soy sauce, 1/2T of vinegar, 1T of Korean red chili flakes, 2t of honey, 2t of sesame oil, and 100g of oysters. Mix well.
    2. Peel 1/2 of cucumber and cut into matchsticks. Cut 100g of Korean pear into matchsticks. Add to the bowl.
    3. Add 2 chopped scallions 2t of sesame seeds. Mix well.
    *Guljeon
    1. Place 100g of drained oysters in a bowl. Sift in 2T of all-purpose flour. Mix to coat. Add 1 beaten egg, 2 chopped scallions, 1 red, 1 green and 1 purple sliced chilies. Mix well.
    2. Add 2T of cooking oil to a pan over medium-high heat. Drop a spoon of the batter per pancake. Cook both sides, 1 min each.
    3. Remove to drain. Sprinkle a pinch of salt.
    4. Served with a dipping sauce made of 1T of soy sauce and 1T of vinegar.
