  • An offshoot of the restaurant that claims to be the only muslim restaurant in Bangalore to have been around since 1935, Chichaba’s Taj is known for serving up traditional muslim-style dum biriyani, kebabs and curries
    In this episode of Gourmet On The Road, Food Lovers’ Editor Kripal Ammana visits the crowd favourite at Frazer Town, Bengaluru, to quell his craving for a good biryani, and along the way also tastes some of the highly recommended kebabs, paya and a peppery bheja fry!
    MUTTON SEEKH KEBAB
    The right proportion of meat to fat makes this succulent kebab. The outer crust envelopes a flavourful mutton mince. This kebab is gentle on the palate despite its fiery red colour. Best eaten hot off the sigri!

    MUTTON BHEJA FRY
    Its unctuous bite coats the palate with its creamy texture. It's delicious, loaded with pepper, roasted onions, curry leaves and chillies. A must-try here!

    The paya or trotter is gelatinous and has rendered well into the aromatic broth. There’s a mild meatiness to this nourishing soup.

    The meat peels away from the bone but still retains its bite. This dish is cooked to textbook perfection with the right amount of spicing that allows the meat to shine through.

    MUTTON DUM BIRYANI
    This biriyani is aromatic with smoky undertones and gently spiced with whole spices. The mutton pieces are moist and succulent with pockets of fat! The baigan ka salan accompaniment with its tartness, adds a whole new dimension, making the biryani livelier!

    Each grain of rice is separate. It has a nice gentle aroma, a hint of tartness from the tomatoes and fresh flavour of herbs. A mild biriyani that will not necessarily jolt your taste buds.
