The latter is traditionally citrus and cheongsam is traditionally unripened plums. The technique is basically kinda the same however the sugar/fruit ratios and the yields are different. Also cheong is fermented. Even though I made this over night in the video to achieve a fresh flavour I could of left this for a month to deepen the flavour.
