I go to that exact same Dau Homemade and its is freaking amazing. Bun Dau Mom Tom is my favorite vietnamese food for sure. There is also a Lau Bo place that you gotta try if you havent already.
Another thing I missed in Hanoi, didn't know about this. Thanks! now I know, if I ever make it back. Just looked at the menu, looks amazing. The description of the stuffed snail shells says there's snail (surprise!) pork and mushroom.

I’ve seen over the past week that unlike the dried rice paper here in the US that has to be hydrated, rice paper in Vietnam is fresh and can be eaten as is.

Thank you for appreciating Mam Tom! It is a "niche" masterpiece of our cuisine that are sadly missed by many foreigners due to their bad smell (even when i swear to them it will taste good) 😂
This is also my favorite dish! Love the shrimp paste sauce. It's sweet, pungent, salty, sour, spicy, unami, flavoured bomb of a sauce. Straight from the jar is unbearable. When you add hot water, sugar, lime, chili, etc. Its so good. But then it's really mellowed out by the fried tofu, rice noodles, herbs, lettuce, and boil pork belly. Combine everything in one bit...argh! Chef kiss!. One of my highly requested meals when I go visited my mom. She also add a pile of slice beef tongue to the platter and that's my favorite meat to eat . I love banh xeo as well.

I don't know about this dish, Joel. I just tried lamb for the first time today. That's about as adventuresome for me today. That shrimp paste must be good though. You can leave the snails in Vietnam!! But a very beautiful presentation!!!!

I love to try every new food, but one thing I am very sure is that when I try new thing I might not have like it first and it feel that it taste weird. That because it a new thing and my tongue 👅 isn’t used to eat but if I continue to eat it again and my tongue get use to it. The taste becomes natural and I will begin to love. No matter what new food you eat. It will give a weird feeling first but if you keep on eating it you will eventually come to love it.

That stuffed snail dish is not expensive at all in VN (snails are actually very common here . They are not rare and expensive like Escargot in France) . You can find it in many restaurants and street eateries in Saigon and especially in Hanoi where it comes from at a very affordable price . It's called Oc Nhoi Hâp La Gung in Vietnamese . Many Vietnamese dishes are made from snails ( Oc in Vietnamese ) such as Bun Oc , Oc Xao Dua , Oc Xao Lang , Oc Chuoi Dâu , Oc Hâp Xa , Oc Nhoi Hâp La Gung , Oc Nhây and many more . I strongly recommend you to visit Vietnam once to realize how affordable the cost of living ( food , beer , hotel , rent , gas , electricity , internet , sim card , transportation , etc...) is here .

The various fermented Mắm pastes (known by various names in Vietnamese depending on ingredients and regions of origin) are essentially the same as the Italian Pasta di Acciughe (anchovy paste) or the Provençal Anchoïade (anchovy paste with garlic, wine vinegar or lemon, garlic, etc). Beside French buildings and Chinese temples, the typical Saigonnais architectural style is a flourish of Art Déco (from L’Exposition Internationale des Arts Décoratifs et Industriels Modernes, Paris 1925) exterior and Style Indochine interior décor, known collectively as Vietnamese Modernist.

That leaf isn't lemon mint...it's purple perilla (the green variety is oft used by the Japanese and is called shiso...Koreans also eat the green variety).

Mắm Tôm does have a strong fragrance but it’s like you can’t handle it. It depends how you mix it. The one for this Dish, it smells light and tasty..
You should go to Cambodia and Thailand they are friendly and the food so good there

the powder they put on the pig ear is called "Thính" that powder somehow doesnt get soggy when it absorb the juice from the meat. Pretty interesting XD

That leaf isn't lemon mint...it's purple perilla (the green variety is oft used by the Japanese and is called shiso...Koreans also eat the green variety).
