Thanks Greg, can we see in the version history who has approved the document and when ? Is there a possibility that the approver puts a message when (s)he sign-off ?
Yes, comments are built into approval; however, if you need those comments to be displayed, you will need to alter the Power Automate logic.

How can I trace who has approved the document? I can see in the video the "Sent to": how can I add this field?
I am not aware of a way to add this field to the library.

Same as if she were to approve via the Power Automate portal or Teams. It will prompt here to approve/reject or re-assign
When this is configured, will all users working on the Library be able to use it already?
The workflow described is one-time workflow created by the user. If you want to have a workflow that works for everyone, you need to create one properly using Power Automate
I do not have options for request sign-off. Is that an out of the box option?
Yes it is

Yes, but that would be another workflow (you have to integrate Adobe Sign or similar via Power Automate)
I have a living document whose contents will change frequently. I want to request specific persons to review the document and sign off on new items added to the document. Is there an easy way to un-sign a document?
