We live in Lake Charles LA and we got that hurricane you mentioned. It’s a disaster down here but I’m enjoying your videos as a refreshing break from all the mess that surrounds me. I just recently discovered your channel. You are so calming to watch. Even in the craziness of having a large family the way you remind us to step back, remember our creator & to take a deep breath....That it will all be ok. I believe you when you say that to us. ❤️. You are always so cheerful & positive. I work at a Children’s ER trauma center & as you can imagine there are very difficult nights. I choose to not watch television. The news is nothing but hate & negativity. I need positive light hearted things in my life. Your channel is just that. I can loose myself if watching your videos knowing it is all positive. I am only a family of 3 but I grew up in a family of 11. Watching your videos reminds me of home growing up. Thank you for offering us a place of solace here on RUclips. Keep doing what your doing &’your channel will continue to grow. ❤️. Sending love & prayers to you & your family.

You are such an inspiration I always jot down notes as you are cooking for things to try or maybe new to us was to make them.
Blessings to you sweet lady and your precious family.

For the tea eggs, you need to make deeper cracks for the tea mixture to seep in. I like to use the back of a spoon. The cracks will be where the eggs turn brown.

Tea eggs-tap and roll hard boiled eggs, put them in a strong boiled tea that is spiced, remove from heat and leave in tea on counter for several hours then put eggs and tea in fridge overnight. The more cracks the better and tea should be very strong. Great job girls, I’m saying hi from Saskatchewan Canada 🇨🇦

How long do tea eggs last?
    3 to 4 days
Soak the cracked eggs in your sauce base for 24 hours in the refrigerator, making sure all the eggs are completely submerged in the sauce base. After 24 hours, they're ready! You can also soak them longer for a stronger flavor. These eggs last for 3 to 4 days in the refrigerator

Jayden, I just watched Mikey Chen doing tea eggs, he used 6 eggs, and 6 cups of water, 1 cup of soy sauce, 2 tsp salt and 2 tsp sugar, 2 star anise, and half a cinnamon stick. He also used 3 teabags. He cooked the eggs, and cooled them as usual, then tapped them all over with a spoon to crack the shells. Then he put them in a pot with all the above and brought them to the boil and turned them down and simmered them for 20 mins, then turned them off and let them sit for 20 mins. Next he turned them on again and again brought them to the boil and turned them down and then simmered them for 2 hours. Then he cooled them in the pot. He said this was the important part as they dialup more of the taste and colour as they cool. Have fun and let us know how they turned out. Love ya, Dee from NZ

They must pre-boil the egg in normal water, then before adding it to the tea mixture for the second boil they must crack the egg shell slightly. So that the tea mixture can leak into the egg and underneath the shell.

I am going to make hard boiled eggs and pumpkin muffins. Fall has officially started here in northeast. The temps won't get any warmer than 70's. I am sure we will have at least one more warm snap, but I wanted it warmer so I could enjoy the pool to do my pt. Oh well. I hope you can still have pool time. Is the bottom layer crusty as well or more soggy? Have a great weekend. See ya tomorrow.

As a young teacher I lived in Taiwan for 2 years. My house girl, she was an older mother of 4, made tea eggs and they were delicious. I think she shelled the hard-boiled eggs before putting them in the pot with the tea and soy sauce, I vaguely remember raw peanuts and bits of pork. I haven’t thought about those eggs in years. Thanks for bringing them to mind. I’m going to experiment.

    to make tea eggs
    1. Dry ingredients
You just need to prepare a few dried ingredients to make the tea egg marinade liquid - black tea bags, cinnamon sticks, Sichuan peppercorns, star anise, and bay leaves. Then you need to boil all the ingredients with the soy sauce and water to infuse the flavor.
Don’t have these ingredients on hand? No worries! Simply use 1/2 teaspoon five spice powder and you’ll make a marinade liquid just as tasty!

    2. How to properly crack the eggs
You can either gently rotate and knock the eggs on a hard surface, or use the back of a spoon to crack the eggs. Handle the eggs carefully if you make soft boiled eggs. You want the egg shells to crack enough to let the marinade in without breaking the eggs apart.

    3. A trick to use the minimal amount of marinating liquid
I use a quart bag to marinate the eggs so I can use a minimal amount of marianting liquid to soak the eggs. If you plan to use a container instead of a quart bag, you should double the amount of marinade so you have enough to cover all the eggs.
    4. Leftover marinade
The tea egg marinating liquid, if stored properly, can be used more than once. If you plan to do so, make sure to use a clean spoon to remove the eggs from the liquid. And you should boil the liquid and let it cool again the next time you use it.
I like to batch-cook tea eggs and store them for later. They make a perfect breakfast, noodle topping, and between-meal snack!
I hope you enjoy the recipe and happy cooking!

    Author: Maggie Zhu
    Ingredients
    12 large eggs
    Marinade (*Footnote 1)
4 tablespoons light soy sauce (or soy sauce)
2 tablespoons dark soy sauce (or soy sauce)
    2 bay leaves
    1 teaspoon Sichuan peppercorns
    1 star anise
    1 small cinnamon stick
    2 teaspoons sugar
    1 teaspoon salt
2 black tea bags (or 2 tablespoons black tea leaves)
    2 1/2 cups water
    Instructions
Mix all the marinade ingredients in a small pot. Cook over medium heat until bringing to a boil. Turn to medium-low heat. Simmer for 10 minutes. Remove the pot from your stove and let cool completely. Once done, remove and discard the tea bags.
To boil the eggs, heat a pot of water (enough to cover all the eggs) over high heat until boiling. Turn to low heat. Carefully place the eggs in the pot using a ladle, to prevent the eggs from cracking.
Boil 5 minutes for soft-boiled eggs, 7 minutes for medium eggs, or 10 minutes for hard-boiled eggs.
While cooking the eggs, prepare an ice bath by combining ice and tap water in a big bowl.
Once the eggs are cooked, immediately transfer them to the ice bath to cool for 2 to 3 minutes. If you don’t have ice on hand, simply run cool tap water over the eggs for a couple minutes until they cool down.
Gently crack the eggs using the back of a spoon. You want to make sure the egg shells are cracked enough so the marinade will reach the interior, without cracking the eggs apart (especially if you made soft boiled eggs). If you’re in a hurry, you can also peel the eggs and marinate them peeled. The eggs will be ready in 12 hours this way.
Transfer the eggs to a quart-size ziplock bag, then carefully pour in the marinade along with the dry ingredients. Marinate overnight for peeled eggs, or 24 hours for cracked “marble” eggs.
Peel the eggs and enjoy them cold or at room temperature!
You can store the leftover eggs in the marinade for 4 to 5 days in the fridge. The marinade will help with preserving the eggs. Note, the eggs will become more flavorful and saltier over time.
    Video
    Notes
    1. Note, the recipe uses a quart-size ziplock bag to marinate the eggs, so you won’t need as much marinating liquid. Double the amount of marinade if you’re planning to marinate the eggs in a container

I was surprised by your use of "dippy eggs". I thought it was just a Pennsylvania Dutch thing. I guess if you have lived among or near the Amish and Mennonite communities, you would have picked up some of their phrases. LOVE dippy eggs.

From what I have seen on facebook, you need to boil the eggs for 20 min. in the soy mixture then turn off for 20 min. then simmer again for 1 hr. and then with the burner off soak for another hour or over night. They say that when the eggs are cooling, that is when the liquid soaks into the eggs. Never tried it but seem like a lot of work for an egg, lol. Maybe the taste makes up for the time it takes to make them.

Amy what dishwasher tablets you use. I have had water and it leaves spots on it. I’ve tried adding lemon or lime juice even vinegar to the load it helps a little but still has that fine film. Since you live in mountain thought you might have better one that you use than I do.

Tea eggs look so cool but I've always been afraid to try them and my kids hate eggs. I got the popcorn popper and for some reason mine wants to burn the bottom layer. How long do you pop it and how much oil do you use? I don't know what I'm doing wrong. It might also be that I'm using Amish popcorn that's very small. Also I'm with Brooklyn, boiled hot dogs taste the best.
