Here's how to tell:
When you pick a racer in Grand Prix mode, the first and second places will always have two specific characters, depending on who you chose. There is a third rival for everyone except Wario, whose rivals are always Mario and Luigi. The third rival is in case one of the rivals is an unlockable.
Here is the chart:
Mario - Metal Mario, Bowser, and Peach.
Luigi - Mario, Daisy, and Yoshi
Peach - Lakitu, DK, and Toad
Yoshi - Wriggler, Toad, and DK
Bowser - Mario, Rosalina, and Luigi
DK - Wario, Koopa Troopa, and Bowser
Toad - Rosalina, Peach, and Koopa Troopa
Koopa Troopa - Yoshi, Shy Guy, and Luigi
Daisy - Wario, Peach, and Luigi
