I think that cinderella was the culprit, and that in the new Timeline nothing happened because she was punished by her stepmother for breaking the vase.
i thinkl Uliana somehow had Ella open the book for them actually. There can be some mutipulation & some misunderstanding with the prank since the evil Bridgtte thinks that Ella/Cinderella did the prank when maybe in reality Ella/Cinderella was manipulated to do it too.

They messed with time in the original version nobody knows who for sure pulled the prank they just assume and I guess there presence change history enough

I think what could have happened is that the VK’s in the original timeline froze, as we see, and Merlin hid the book. But since Red and Ella weren’t there to take the page, they tricked Ella, Brigit’s friend, into opening it somehow, since she’s good. Then they got in and…well, the rest is history.

We don't really know what had happened in the 'original' timeline, but it can be confirmed from the dialogue that Bridget suffered from a 'prank' that used a recipe from that cook book and the dessert turned her into a monster and the aftermath of that prank led to her becoming feared Queen of Hearts

If I had to change the story my way, I would say that : Cinderella heard that Ulianna wanted to get her revenge, so she stole the book to prank Ulianna before she does it to Bridget to protect her friend. Bur unfortunately the bad crew were aware of this so they waited until Ella left the book Alone and open so they stole it and play their prank.

1:25 - 1:27 The movie: In this scene, Chloe tells Red “You’re a good person.” Me: She literally just sentenced her mom to be beheaded before all of this. The movie: Yeah, such a good person.
The only thing this movie said for sure is that Cinderella was NOT behind whatever the prank was that was pulled on The Queen of Hearts. Cinderella was either framed or took the fall. Either way, we know the real culprit was apparently Uliana, Maleficent, and Captain Hook. What was the prank? Is Disney doesn't finney this story then we will never know and will never know how Bridget will handle the fact that it wasn't Cinderella and she was angry all those years with the wrong person
My guess is that orginally Ella must have overheard the villains planning to steel the book and so she decided to meet up with them. Ella knew that only a "good guy" could open the book hence why she met up with them in the first place. The villains had no idea of the book being cursed. So Ella is the one that opened the book and ripped out the page and gave it to the villains to use. The book was put back so then Merlin wouldn't know if something had happened. But when Red and Chole went back in time they got Ella grounded to prevent her from meeting up with the villains and so when the villains steal the book they are unknowingly frozen. And to be on the safe side Red opens the book and rips the page out to make sure that the prank will not be carried out by anyone else. After all there is a small possibility that Ella or someone else could still try to steal the book, open it and carry out the prank again. The rest is history. Hope this helps.

Well, the book was enchanted like Bridget said. So they let Uliana open the book and the book turned Uliana and the her gang into statues.
