    I made these and they were SO good! 2 members of my family who dislike stuffed shells even gave it a try and absolutely loved them! My hubby said that he didn't know what I did but to never ever change the recipe!! Thanks so much! 👍

    Joe, from the bottom of my heart thank you for your knowledge. I’m immensely grateful to you, your family and all of Italy for blessing my life with the most amazing food I have ever ever had (and I’ve had a lot of cuisines) I fell in love with lasagna when I was a child and I had it at my parents Italian friends home.     My Italian mom would sweeten the ricotta cheese with sugar. The sweetened ricotta would add tremendous contrast in flavor with the GRAVY! Not too much sugar. Our dinner guest were amazed at the flavor!

    Ciao Joe..........I was blessed to be taught how to cook by 2 different grandmothers. . My Nonna and my grandmother. I am lucky to be known as a very good cook. When I found your channel I fell in love. You are authentic and I have learned from you. Now , before I make any kind of dish I see if you have a recipe for it. I recently made your Ricotto cheesecake and your stuffed shells with a few of my additions......I had many Ooo's and ahhhh's over it all. Thank you for adding to what I know about cooking.     Love, Love, Love this recipe. Mine is very similar but I like the olive oil thing, so I will adjust how I make my shells using this formula! Many years ago, my little Italian neighbor told me her secret. It wasn't nutmeg, so I'm excited to try this!

    I planned on making this today and came across your recipe. Definitely want to incorporate your recipe with mine. I’ve never added olive oil to my ricotta (or strained it) so I am going to try that and the spices as well. Thanks for tips, I would love to be a taste tester in your videos!     Been making stuffed shells for 45 yrs... never thought to do it this way with the cheeses. I usually mix mine in with the ricotta. I can't way to try it Joe's grandmother's way. :o)

    if i want to prepare before hand do I cook it all the way and save it or just save before baking... please advise

    I love your cooking videos. Your passion for the food is clear. I did look up your olive oil on Amazon and thought about purchasing. If it had been eligible for Prime, it would be on its way, but $30 for the liter, plus another $12 for shipping was just too much for an old retired guy like me.

    my son has asked me to prepare stuffed shells for his wedding!! will make 200!! I have been practicing as it is a new recipe for me, and I am getting better, and I LIKE your method and video presentation. what are your suggestions, should I freeze them, or prepare the day before and just refrigerate.

      Freeze. Use parchment paper. Make 30 to 40 a day. Make sure you keep them frozen and put them frozen into the oven or they will thaw and get soggy and sticky.

    If I wanted to add spinach, should I place fresh chopped spinach in the shell before the cheese, or mix into the cheese? Have you ever done this?

    Joe, Love what you do and the love will be repaid back to you when loved ones enjoy your dishes! Also did I just see you lick that ladle and put it back into the pot of sauce?.... Maybe do a show on safety and cross contamination.... maybe? Other than that love the show.

    Takes to long Boil your shell then put Rocatta in shells while hot put Ragu garlic on top good to go you burp done in 20 min that includes eating 9 burp
