I watched the short a couple of times and could not figure out what was supposed to be "untouchable". Usually untouchable means you are "the best" at something or that you are a social pariah (those who have leprosy are called untouchable (sadly)). It seemed like she were trying to say that it is something that will always exist in the past as something that DID happen and was good for whatever form it took at that time, but I don't think the word fit the situation.
