    Joel, you’re a natural in front of the camera. Thanks for stepping in while Greg is recuperating. Good to know that he’s on the mend. Your cookbook collection is impressive (as are your stories) and your Italian ceramic dinnerware is beautiful. I couldn’t help but smile at the “Ti amo, bello” Post-it note.🥰 I’d like to see a “Baking with Joel” video some day.🍰

    Would love to hear more about some of the things you like to cook/bake, maybe some fun discoveries, or stories about dishes and a pan even deeper dive into some of the cookbooks. Great job and camera work!

    Loved your bookshelf tour, Joel. What a great collection of cookbooks! I used to have a closet full of cookbooks but thinned them out as I moved into a smaller place last year. Now I want to re-build my stash starting with the Book of Pie.

    Joel! This was an awesome video. Loved the cookbook tour and the peek into your kitchen. That book from Jen the Librarian fell open to a recipe for one of my favorite dishes: cotechino con lenticche. It is a traditional New Year's Day dish. You should try making it (although I'm guessing you might have a challenge sourcing cotechino in Montana).
    Great job! Hope Greg is doing well today.

      No, I’ve not thought about it! It’s fun to do special segments for Greg but doing it full time would be incredibly hard, I see how much time spends on books and cooking would be that much more and my full time job keeps me busy! But thanks for the encouraging words, maybe someday! ❤
      And yes my copper pan is a prized possession.

    Joel - you and Teddy did a wonderful job - enjoyed the tour - you had me at cookbooks.
    I love cookbooks - I will often read a cookbook like others read novels. I make corn & blueberry muffins. Plan to give your chocolate cake a try. Italian food is my favourite - Amalfi lemons are so amazing. The Land Where Lemons Grow: The Story of Italy and Its Citrus Fruit by Helena Attlee is ticking my boxes these days - lemons, Italian food, and recipes - couldn't ask for more. Thank you for an interesting an informative video. Hope Greg has a speedy recovery.

      Another recommend - maybe. Eating to Extinction by Dan Saladino. It was an impulse buy - title and cover attraction. there are 10 sections - each about a different food group. It lived on my shelf for a bit - but once I read it it went straight to the top of my list (in January) and stayed there all year - truth be told it is still on the top of best ever books. Warning it is not for everyone. No recipes - but covers the history of the food item - how it changed over the years - what replaced it in everyday life.

    I sure did enjoy that! I love the personal references to your history of cooking and where you got the cookbooks. Did you really go to Italy? Haha! Love that you both keep bringing it up!     This was just such a treat! I absolutely love bookshelf tours. I’ve never seen a cookbook bookshelf tour. I sometimes enjoy cooking but struggle finding recipes. I hate to spend time and money cooking something from a recipe only to find out it’s not spectacular, so it’s nice to hear your recommendations. It would be fun to see a video where you cook something inspired by a book you and/or Greg has read (include the book review as well!). And then show us the cookbook the recipe was from. Greg, I hope you’re not uncomfortable and you recover quickly. Thanks for this video, guys!

      That is a great idea to cook from a book. One thing I will say about getting recipes online is to make sure they are reputable sites, so many are not tested and fail, which hurts the wallet and self-esteem (personal experience). For cooking look at Milk Street and baking King Arthur. Thank you

    Loved this video! It was like I could smell something delicious baking in the oven while Joel was sharing his passion. I really want to start a collection of beautiful cookbooks….I just learned how to cook chicken like, 2 months ago (I’m 38 😅) and now I think I’m this culinary genius apparently lol. Seeing his collection really propelled that desire 💛
    Love those dishes…I love anything with lemons on them! Would also like to start a collection of that 🤑

      Thank you, internet is good tool too, just be very cautious, that there are reputable sites, too many untested and fake recipes out there I love Milk Street, King Arthur, and NYT Cooking.

    Well, I absolutely adored this. I have a shelf of cookbooks, too, and it’s so interesting to see what other home chefs have on their shelfs! (I also was gobsmacked when you dropped those casual little references about being Curtis Stone’s sous chef and making bananas foster for TINA…I’m sorry, WHAT? That’s amazing!) Also..that Pasta book…my lawd. 😂

    Thanks, Joel, this was fun to see! And thanks for the cookbook recommendations. (I wish my husband cooked, Greg is a lucky man!) I especially loved seeing the note from Greg. When Greg talked about the notes you leave each other I actually teared up, it’s just so sweet. ❤
    I’m going to order Salt, Fat, Acid, Heat, it looks like an interesting read (and I love the pictures.) I need to eat a restricted diet due to End Stage Renal Disease, and everything tastes so bland, I’m trying to find no-salt solutions.
    I hope Greg continues to heal quickly, I’ve been thinking about him. Thanks again for jumping in this week to give me my Supposedly Fun fix! Happy cooking to you!

    Very fun! If you haven't read My Life in France (audiobook) by Julia Child, I highly recommend it for you. Its such an engaging story infused with good cooking stories. Also if you find yourself in VT, be sure to visit King Arthur Flour. Its worth the trip. Thanks and give Greg our well-wishes.

      Thank you. I love Julia's Book, which I read last year. I used to spend a lot of time in VT but failed to make it to King Arthur, I kick myself for that. But in Manchester, VT, there is a great cooking store JK Adams, very fun.

    I can recommend the Italian cookbook published by Phaidon Press: The Silver Spoon. It is very comprehensive!
    I have just culled my cookbook collection (for space reasons) and this is one of about 10 that I had to keep. I also kept Three Good Things by Hugh Fearnley-Whittingstall and Japanese Home Cooking by Yoshihiro Murata.

    Loved this video you did a great job Joel! One of my intentions for 2024 is to enhance my cooking skills. I am inspired!! Do you have any recommendations for books about working with spices and herbs? I really want to elevate the my knowledge about which spices/herbs are complementary when cooking and baking.     What a nice little tour! I heard you say a couple of things that really made me sit up.....i was born and raised in KCMO, and i now live in the western suburbs of the KC metro (on the Kansas side of the metro). Sounded like you said you were from Kansas! Are you a professional chef? Thanks again for the tour of your book shelves!

      Yes, I am from Kansas, went to culinary school at Johnson County CC, and worked at the Alameda Plaza (Where I cooked for Tina), I try to explain to Greg how gorgeous The Plaza used to be at Christmas, sad they did not keep it up. Not cooking professionally anymore, just at home.

      I do not have a favorite go to, the cooking with chocolate by Valentina chocolate that is faced out on my shelf is a good one I like.

    This was so much fun! You have a really impressive cookbook collection. And -gasp- you've cooked for Tina Turner. That's wild!
    I'm a bit afraid to ask this, because the last time I asked this question in an online group I think I almost started a war between Texas and Georgia, and I'm not entirely sure you're allowed to even answer unless you're from the right part of the US, but can you help a European out with a good cornbread recipe? 😅 Mainly to be eaten with chili con carne, so not the sweet kind. And I mean cornbread for dummies here, like I need to know what colour and coarseness corn flour. 😬 Whenever I've looked for a recipe I've found brand names that just aren't available to me. Help me, Obi Wan Kenobi? 😂

      I'm a Kansas Boy with Oklahoma roots. I love cornbread (It's even a nickname for me in some kitchens).
      So here is my goto cornbread, you can omit the sugar if you do not want it to be sweet, honey can help carry it.
      I use fine cornmeal or Blue cornmeal (sometimes both, make 2 half batches and swirl it together for a marble effect).
      The biggest thing is not to overmix it. - Good Luck and Happy Baking.
      Cornbread’s Cornbread
      From Joel McClanahan
      Ingredients
      4 each egg
      1 1/4 cups milk
      1/4 cup honey
      2 cups cornmeal can use regular or blue cornmeal
      2 cups all-purpose flour
      1 cup sugar
      1 tablespoon baking powder
      1/2 teaspoon salt
      1 stick of butter melted, 2 if you want decadent
      Directions
      - Preheat oven to 350 degrees F.
      - Whisk eggs, honey, and milk in a small bowl and set aside.
      - Whisk the cornmeal, flour, sugar, baking powder, and salt until fully combined.
      - The step above is very important!
      - You need your dry ingredients to be fully incorporated, this will be the only time they get mixed.
      - Pour the liquid mixture into the dry, and whisk vigorously for about 10 seconds until the flour is moistened. If it looks lumpy, that is OK. Having a lumpy batter is better than overworked dough, which will cause the cornbread to be dense.
      - Add the melted butter (you can use 1 stick, but the more the better) and whisk vigorously for another 10 seconds, then fold with a spatula if needed.
      - Pour into a prepared 9x13 pan. Bake for 35-40 minutes, until a cake tester comes out clean.

    If your collection is any indication, you are a man who takes chocolate seriously. Here's a question: do you use recipes that don't have pictures with them? I have such difficulty if I can't visualise what I'm trying to make.

      I like a photo to let me know what it is supposed to look like, but rarely follow them. I like photos for step-by-step items that are difficult.

      Of course we don't only want followers of a certain political persuasion. But Joel and I do believe in conscious consumerism (choosing to make an effort to put our money toward people/companies who will do good and away from ones who will do harm). I think it’s important to help other people make similar informed decisions about how they spend their money and their energy. That’s why I won’t tell people not to read books by J.K. Rowling or Margaret Mitchell, for example, but I will ask people to reflect on the genuinely harmful things they have done to certain communities. Donald Trump is the same, although I would argue that he has harmed multiple communities (not just one) and actively worked to damage our democratic institutions. Sometimes, he does these things directly and sometimes he does them indirectly-like how he helped make Montana a more dangerous state for the LGBTQ+ community by campaigning for (and helping elect) a Trump loyalist as governor here-a man who, among many other things, has undone legal protections for LGBTQ+ people. This is a man who has publicly (and against the wishes of his own nonbinary child) waged war against gay rights. And he is endorsed and supported by Trump. So Joel and I are very conscious that we don’t want to financially support Donald Trump, and I do hope that people who agree would also be careful not to support him.
      I appreciate your support and that you like me, Joel, and Teddy. But I can only be honest about the damage Donald Trump and his cronies have done for families like ours. If they had their way, we wouldn’t be a family at all.
