  • Hello guys note 500g small white Dal mash recipe for home cooking.
    Ghee/oil 150g
    Onion 1 small size in slices
    Tomatoes 2 pcs chopped
    Yogurt 1 cup
    Red chilli powder 1 tpn
    Turmeric 1 tpn
    Crushed chilli 1 tpn
    Ginger garlic paste 1.5 tbl spn
    Salt to taste 1/2 tbl spn
    Crushed coriander 1 tbl spn
    Cumin seeds 1 tbl spn
    Garam Masala powder 1 tea spn
    Boiled and tender white lentle (Dal mash) 500g
    Water 1 glass 250ml
    Garnish with green chilli & Fresh coriander leaves
    Make this famous and traditional Pakistani truck adda wali White dal mash at home and enjoy with your beloved family.
    Also Ingredients: for 1 daig recipe
    Daal Mash 12 kg (soaked for 2 hours)
    Onions 5 kg (finely chopped)
    Oil 4 litre
    Garlic paste - 1 kg
    Ginger paste - 1 kg
    Green chillies - 1/2 (chopped)
    Tomato paste - 5 kg (blended into a paste)
    Yoghurt - 5 kg in per daig (whisked)
    Salt - to taste or 1/1/2 spoon large handi size
    Coriander powder - 1 hand spn
    Red chilli powder - 1 hand spn
    Turmeric powder - ½ handispn
    Crushed red chillies - 1 hand spn
    Tarka:
    Red chilli powder half spn
    Turmeric half spn
    Cumin seeds
    Goal Chilli 30 gram
    Fresh coriander leaves - for garnishing (chopped)
    Fresh ginger - for garnishing (julienned)
    Green chillies - for garnishing (optional)
    Preparation Method:
    1. Soaking the Daal:
    Rinse the daal mash thoroughly and soak it in water for about 2 hours. This helps soften the lentils and reduces cooking time.
    2. Preparing the Base Masala:
    Heat oil in a pan over medium heat. Once the oil is hot, add the chopped onions and sauté them until they turn golden brown.
    Add garlic paste and ginger paste tomato paste and cook the mixture for about 5-6 minutes until the oil starts to separate from the masala.
    3. Adding Yoghurt and Spices:
    Stir in the whisked yoghurt gradually and cook for 2-3 minutes while stirring continuously.
    Now add the following spices:
    Salt (to taste)
    Coriander powder
    Red chilli powder
    Turmeric powder
    Crushed red chillies
    Mix everything well and cook the masala on medium-low heat until the oil separates from the mixture (about 5-7 minutes).
    4. Cooking the Daal:
    Drain the soaked daal mash and add it to the prepared masala.
    Stir the daal into the masala, ensuring it's well-coated, and cook on medium heat until the oil separates (this may take 15-20 minutes).
    5. Simmering:
    Once the oil has separated, add a little water to the mixture (enough to create a semi-thick gravy).
    Cover the pan with a lid and let it simmer on low heat for 20-30 minutes, allowing the daal to fully cook and absorb the flavours.
    6. Tarka
    Red chilli powder half spoon
    Turmeric half spoon
    Cumin seeds
    Goal Chilli 30 gram
    7. Garnishing:
    Once the daal is fully cooked and the oil has surfaced, turn off the heat.
    Garnish with freshly chopped coriander, julienned ginger, and green chillies (if desired).
    8. Serving:
    Serve hot with naan, roti, or steamed rice.
