    I make a simple syrup with honey, filtered water and add dehydrated lemon and dried lavender. Works great for when our allergies act up.

    Mary, that's a Cherokee recipe. If you want it powerful, boil the ginger down too half, let completely cool, then add your honey and lemon. Leave the ginger in it, and strain as needed, but make sure you shake it up before using, that way you get some of the mother in your cup. If I feel a little tickle in the back of my throat, I drink a cup, and it burns that cold away.

    Fun fact! Honey is sometimes prescribed in Europe before an antibiotic if a person has a history of MRSA.
    I share your view on medicine. My son was born at 24 weeks and 3 days... or about 16 weeks early. He spent about six months in the NICU, and would not be alive if it wasn't for modern medicine... and I still reach for the natural remedy if it can be used instead.

    Years ago, as a poor college student, a sore throat was a given sometime during the freezing winters. I used a straight shot of Bacardi 151 to cauterize with a chaser of the saltiest chips I could find. It worked. 🤷

      Wow!! Now that's a way to knock out a sore throat! LOL!! My mom always recommended a salt and water gargle - sort of along the lines of your salty chips. I think I like the salty chips better!! LOL!! Love, Mary

      Years ago when my girlfriends mom was still alive, she would have to make sure that she was home before her mom’s bedtime because she said she had to make her a hot toddy before she laid down. That was the first time I also ever heard of such a thing but she said that it helped to cut through her congestion in her chest so she could breathe and get some sleep. Otherwise she’d be coughing through the night.

      @@celestiaam7997 Hot Toddy rec... In a teapot or saucepan, bring the water to a simmer. Pour the hot water into a mug. Add the whiskey, 2 teaspoons honey and 2 teaspoon lemon juice. Stir until the honey has disappeared into the hot water. Garnish with a lemon round and cinnamon stick (if using). Enjoy!

    Thank you for this tutorial, Mary. So useful, especially now. Your talk about different types of honey was very informative and much appreciated. I have grown my own ginger for about 12 years now and for the last 2 years, my turmeric. Turmeric grows quite well here in Central Texas, if you haven’t tried it yet. I started mine a year ago Spring with several one inch pieces cut from organic turmeric bought at Central Market. Just as an experiment. Was told not to harvest first Autumn but to overwinter and let it grow throughout the next year before harvesting. Planted two big pots with five 1” pieces in each pot in spring of 2019. Threw pots in little popup greenhouse thru cold weather and then let grow in same pots all this year. Beautiful, beautiful blooms on the plants this year. Wish I could send a picture. Harvested one pot recently and weighed out 4 lb. 7 oz. of turmeric rhizome. Afterwards I was told to wait until after first frost before harvesting. 😫 So I’m holding off on the other pot. Our average frost is listed at Dec. 6 and hoping it holds off until then as my second crop of green beans are still coming on strong. Will harvest turmeric and ginger after that. Sorry, didn’t mean to write a book-you just inspire me so. (See how I shifted the blame to you there. hahahahahaha). Already have my fire cider and your honey/garlic/turmeric tonic in fridge. Keep up your great tutorials, please! Sprouts still has horseradish if you don’t grow your own.

Honey and blackseed is the best, along with ginger.

    Basil is awesome with honey it helps tackle stress, anxiety, and inflammation with a relaxing cup of tea made with the leaves of holy basil. It is really tasty too. I make a homemade cough med for my kids out of Honey and Bee Pollen (Bee Bread). You could also mix it with Elderberry syrup and honey.

    MARY, IF I FEEL I AM GETTING A COLD, I BOIL WATER, LET A TEA BAG SIT IN A CUP AND POUR THE GREEN TEA IN THE WATER THEN I PUT LEMON AND HONEY IN IT, AND IT REALLY DOES THE JOB FOR ME.

    I made your recipe for simple syrup but added a twist (ya know how some of are...gotta monkey around with everything!!! lol) I added 1 cup of lemon juice instead of 1 cup water and now my gang wants this on everything!!!! Think I need to live on a ginger farm....with lots of bee hives!!!

    Can you use....Raw sugars like Turbinado & like those? Great with raw.....thankful my nephew does his own honey.....although I use more in my homemade sauces & marinades....some baking & cooking! I had gotten away from as much processed sugars as possible years ago & now raising my 9 year old....at 67......NATURAL.....always better! Love all Your Great info....Thank You & Have a Blessed day!

    I JUST went to a health food store yesterday looking for syrups. Their's had sucralose in them; said no to that. What ratio of natural fruit flavors would I use? Also, can you recommend natural, organic fruit flavors. I want to use this for teas n such. Love ur channel; tyfs.

      Hi Melody, Never worry about asking questions! I'm always happy to help! Yes, you could split a vanilla bean and infuse the syrup with it. When you remove the vanilla bean save it and re-use it in your next batch of simple syrup. Love, Mary

      Great question. Once you add water to honey, it does considerably shorten the shelf life. It may be 1-2 weeks, but you really have to check it. Smell it and make sure there is not mold that has developed. It is smells good and there is no mold, it should be fine. But the general rule is about 1-2 weeks. Love, Mary

      Welcome! So glad you're here!! Whenever you add water to honey, it significantly shortens its self life - even refrigerated. So it's best to make a small amount that you will use up in a week or two such as for sweetening other herbal preparations or drinks like a Hot Toddy. (I have a video coming out next week for an alcohol-free Hot Toddy.) Now, that said, some have told me that even after more than a few weeks, their honey simple syrup seems fine. I think as long as it smells good and has not developed any mold, it might be fine to use. Hope this helps. Love, Mary

    Did you make a video of preserving dandelion flowers in honey?
    I did not refrigerate that.
    Does the mead type solution only happen when adding water?

      Great question, yes, Honey generally begins to ferment once it is introduced to some type of moisture. I’m not sure what the effect is when only herbs, etc. are introduced. Love, Mary

    I have a friend whose husband has bees, but has them wintered in California, then moved to South Dakota when they need to be there. We live in Texas. She always gave us a pint of honey every Christmas we worked together. I know some has turned to sugar, how do I get it back to it's liquid form? This sounds so good. I know the honey hasn't been processed, but neither is it local. Can I still use this for simple syrup and infusions? Some work better than a prescription!! My grandmother told me about several things that really helped and worked. There are many harmful additives in our medicines!! My dad said the cure is worse than the cause!!💜💜

      Hi Gretchen, You can definitely use that honey. If you put the container in a bowl of hot water, it should start to liquify. But you can also just scoop some out and mix it with warm water to make the simple syrup. It may take a bit longer to dissolve but it will dissolve. Keep me posted. Love, Mary

      This probably sounds silly but I knit tubes to go over my jars of honey. That helps me even when storing in dark cabinet but especially if you keep out in kitchen. Slows down the crystallization. If you don’t knit or crochet, just throw a heavy work sock over it.

      @@MarysNest Would this impact the shelf life of homemade juices? I've heard that canning honey makes things go bad quicker even though it is indefinitely good on its own.
      Sure, many nutrients would get killed in the water bath process, but it still would be so much healthier than white sugar.

      @@478cookies - That's a great question. I'm not sure. I know that adding water or other liquids to honey significantly shortens the shelf life - and it needs to be refrigerated - otherwise it will begin to ferment. However, as to canning, I'm not sure. I would check the National Center for Home Food Preservation and see what they say. Love, Mary

    Hello again Mary, can you tell me any characteristics of real honey. Here in PR is not common to see any honey that isnt in a store shelve.

      Great question. If it’s raw, it will be labeled so. Otherwise it can be difficult to tell the difference unless it is a solid honey with the honeycomb still in it. Love, Mary

    YOU KNOW MARY, I COULD NEVER DRINK LEMONADE. THE SUGAR AND THE LEMON WOULD GIVE ME A UTI. NOW I CAN NO LONGER DRINK SWEET TEA. SAME THING, AN UTI. THE LEMONADE THAT I USED TO MAKE HOMEMADE, I COULD TELL WITHIN A HALF HOUR, THE SWEET TEA TAKES ABOUT 24 HOURS , THEN I CAN TELL I AM GETTING A UTI. SO, I CANNOT DRINK ANYTHING WITH SUGAR THAT HAS NOT BEEN COOKED.

      If you are getting them (UTI's) so often... maybe something else is wrong?
      How much water do you drink every day?
      ...almost everyone, everyone, drinks too little water.
      Filter it♡ then drink half your weight in water ounces every day!
      Seriously: I'm an 160 pounds (active) woman.
      [Half of 160 is 80] so: I drink at least 80 ounces of water every day. That's the water rule.

      @@wild-radio7373 OH THANK YOU ANAME, BUT I DON'T GET UTI'S ANYMORE. I DON'T DRINK ANYTHING WITH SUGAR THAT HAS NOT BEEN COOKED. I HAD THEM OFTEN WHEN I WAS A LITTLE TINY GIRL. 5 OR 6 UP TO ABOUT 14, THEN THE DOCTOR ASKED ME WHAT I HAD BEEN DRINKING IN THE LAST 48 HOURS AND WOULD TELL HIM, COKE, OR ICED TEA OR LEMONADE. WELL, THERE WENT MY COLA, ICED TEA AND LEMONADE....LOL. I DRINK ABOUT 32 OZ OF WATER A DAY, I KNOW THAT IS NOT AS MUCH AS I SHOULD BE DRINKING BUT BETWEEN THAT AND MILK AND COFFEE, I AM GOOD.

      (Oh, by the way... just a heads up: i was not sure if it is my place or not... but i had to tell my mother something similar: so, whenever you are typing a message on the internet... when a person uses all capital letters, all caps, people tend to read it as that you are yelling... screaming, actually.
