You could do double lights as well, one to light the background and the other the foreground. Would this work?

I have that, the rear lights are not on in this video. Super bright with both on. Having just the front light on shows the color of the fish nicely without stressing them out with the “stadium” lighting on. 😁

It is personal preference and all lights that are full spectrum adjustable are different.
I would suggest adjusting it to your liking. The red light tones will make the yellow/orange/red in the fish pop. The actinic…or blue tones will make blues be more vibrant
