I now understand how you sign the notepad but how do you sent the signed message without encrypting it ?
Because when you uncheck the encrypt for me and the encrypt for others boxes you suddenly can't choose recipient?

That's correct, it's because you don't need to choose a recipient. Choosing a recipient is required only if you are encrypting it for someone.
Just copy the (unencrypted) signed message + all the ciphertext and paste it into gmail or something, and send it straight to the recipient. If they have your public key, then then can check your signature.
