You have to remember pros get 2-3 different gloves every season, 1 for game, and 1 for practice. They are putting pine tar on their PRACTICE gloves, doesn't mean they do that to their gameday gloves.

I feel like the reason they used pine tar in their glove is because they probably just got these gloves, they’re obviously at spring training so the gloves are new and fresh and need to be broken in more. Until then use pine tar so the ball doesn’t just bounce out like it did for both of them.
