    I smoked the rack of lamb on my Traeger for about 45 minutes at 220 degrees. I let it rest for 10 minutes, seared it in a hot cast iron quickly in butter and then let it rest before slicing. I served the lamb over fresh risotto!
    I smoked the ribeye steak for about 30 minutes at 220 degrees and then reverse seared it in my lodge cast iron. I served it over a board dressing of cilantro, garlic, rosemary, olive oil, salt, pepper and a dash of white vinegar.
