That looks really good! I've been using the SNS Kettle for a few years and it's been great. The only problem is that I have several paying customers and I don't have a way to do more than one brisket at a time. This is be a pain, especially around Thanksgiving and Christmas, when the demand is higher. I've been thinking about buying something that would allow me to do more than one brisket at a time. The Grand Champ XD might be a good option. Sorry about your uncle, by the way.

Damn I thought you were giving me that end piece.The bark looks great have to be lovin on the pepper.I just ordered me some tallow,I’ve been using duck fat.Trying some St. Louis ribs right now at 215 on my Weber kettle for the whole cook 8 1/2 hours in bending pretty good at 180 just lightly sauced and gave it some air up to 278 best looking bark I’ve had on ribs.Heavy pepper,some salt and your pork rub recipe.What I’m licking off my fingers tasting good,be ready to eat soon.🔥👍🍻
I have mine in the stock position and I have been trying to get away with smaller fires inside the fire box with smaller splits added more often while still burning as clean as I can. It seems to get a smoke ring all over but I would have to agree with you that I feel it is a stronger smoker penetration on the under side of the meat. That's an awesome looking piece of meat. I got a new char-griller grand champ and I'm having trouble managing the fire. I need to keep it hot/big enough to keep a bed of coals but then it seems like the temps are too high. If I make the fire smaller to keep the temps down, I can't keep a decent bed of coals to light the next split. Got any tips for me? You logs seem to be bigger than the ones I use. Thanks man!
The cooker definitely runs hot and I have begun adding water pans. One under the cooking grate and a small one on the grate but might just stick with the one underneath. It needs some water without a doubt. Thanks so much for checking out the video and happy smoking, Randy! 😎
It’s always going to run hot due to the small size of the fire box and the huge smoke entry from the firebox to the cook chamber but to help mitigate this try looking into getting some tuning plates and/or a heat deflector. The baffle plate that comes with it doesn’t cut it. Hope this helps!
Fantastic brisket right there. I wish that I could afford a piece of meat like that. The price for that here would be around $100. I have to suffer with just pieces of brisket that cost between $20-$30. They just don't cook the same as a whole packer. RTFO!!! GB🤘

It was awesome but different. It runs a little hot, so some of the bark got a touch hard but it smoothed out in the wrap. Also, cooking fat cap up and down is a little different. Still all in all, it was neck and neck with Dyna. I might have to do the side by side comparison once brisket prices settle back down. Cheers Brownson!
