I've been smoking and grilling for 40 years and some like BBQ pit masters would say that's overcooked because no bite through they want a perfect bite showing where you took a bite. I like mine the way you smoked them just about to fall off the bone at that point they are very tender but not mushy which is overcooked I call it a giant meat sponge great job. I really needed that video, today we took our 15-year-old dog to an emergency clinic they treated him going to take him to our vet tomorrow been upset all day don't know if he will live or not your video helped a lot put a smile on my face keep on smoking my friend and if you want to move there are houses next to us.👍

Had to give you the win on this one. You busted you’re butt attending to the fire all day and it was offset vs pellet and I know you got plenty of smoke on those ribs. Awesome job man bet that brisket on a stick was delicious.

I have had it take some bark off in the wrap (both paper ad foil) and with this simple foil crutch, they were wrapped just under an hour. To me, I've been trying this method almost as like a tallow topper/mock glaze to flavor and moisturize without distorting any bark. Might be a waste of time, just what I've been experimenting with. I tried it right after taking it out to rest but it seems to have better flavor if I wait. Best, Steve. 👍

LIVE UPDATE: I have stopped using the basket all together and just go with very small splits of wood and sometimes, I will go with a charcoal base and use larger chunks of wood as I like to do in Dyna-Glo. Cheers to you and happy smoking, my friend. 🔥

I honestly wouldn't feel comfortable with more than three briskets on the bottom rack and maybe a couple pork butts on the top rack... even then, I wouldn't want the pork butts dripping render on my brisket bark. Just me but that's my OCD side. Thank you so much for watching the video. 🙏
Newbie question here Joe, what does the tallow do at the end there while resting? Is it for moisture or flavour? If they taste only half as good as they look, they must be delicious!
Thank you Journey! 🙌 Yes, Sir! The tallow is helping the bark stay more moist (I prefer a softer bark) and I do believe it is a flavor enhancer. As I admitted in the video as well, it certainly helps for the appearance as well.... gotta do something with all that tallow. I usually end up with about 6-7 large masons jars worth when I do a big batch of brisket trimmings.
I like to make sure my juices don't leak out, especially with foil and the larger beef rib bones tending to pierce through the foil. I still do the same on pork ribs too for the same reason. Just don't want to lose all the juice for the flavor and also helps keep the smoker less messy. Thanks so much for checking out the video and for commenting. Fire and smoke got you on appearance because one of your ribs fell off the bone but yours look more juicy and his were sweet with the maple hickory tub and I prefer the Texas type of rub you used and your smoke ring was way better because of the offset smoker. Yes, sir. It depends on the location though. Only one of the three costcos we have here in Indy carries them. The Costco on the north side off of allisonville road has them if you're in Indy.

This might be a dumb question but why do people double wrap the ribs? why can't it be a single wrap?
