To make oha soup using ofor, follow these steps:
Ingredients
Gather oha leaves, uziza seeds and leaves, assorted meats (like goat or chicken), stockfish, crayfish, palm oil, ofor (thickener), and seasonings (like salt and seasoning cubes).
Preparation
Wash and cut the oha leaves (with your hands), soak and clean the stockfish, and boil the assorted meats until tender.
Cooking:
In a pot, add the boiled meats, stock, and palm oil. Let it simmer, then add crayfish and seasonings.
Thickening:
Dissolve the ofor in a little water to create a smooth paste, then stir it into the soup, cooking until it thickens.
Final Touch:
Gently fold in the oha leaves, allowing them to wilt in the heat. Serve hot.

Measure the amount of ofor you need (typically around 2-3 tablespoons, but adjust based on your soup volume).
In a small bowl, add a little cold water (about half a cup) to the ofor. Stir well to dissolve it completely, ensuring there are no lumps.
2. Adding to the Soup:
Once your soup is simmering, slowly pour the dissolved ofor mixture into the pot while stirring continuously. This helps prevent lumps from forming.
3. Cooking to Thicken:
Keep the soup on medium heat and continue stirring as it cooks. You should notice the soup starting to thicken within a few minutes.
If it becomes too thick, you can add a little more water or stock to reach your desired consistency.
4. Final Cooking:
Allow the soup to simmer for about 5-10 minutes after adding the ofor. This ensures it cooks through and the flavors meld nicely.
5. Adjusting Consistency:
If you find it’s not thick enough after simmering, you can mix a little more ofor with water and add it again, repeating the stirring process.
