How to make Beef Stuffed Potato Balls

  • In a large pot boil water add 2 peeled potatoes that have been chopped into big chunks. cook until soft approximately 20 minutes.
    Let potatoes cool off, then add 1 egg and 4 heaping teaspoons of flour. work with it until it is slightly thick and creamy add 1/4 teaspoon of salt and pepper. Add more flour if needed.
    On a floured work area, roll potato mixture in your floured hands. Form a meatball sized potato ball. With one finger poke a ditch in the center of your potato ball. Add the filling. Squeeze the top or add more potato to cover the opening. Roll your formed potato ball in all purpose flour. Fry in hot vegetable oil until golden Brown.

    3 tbsp sofrito
    1 envelope Sazon
    tomato sauce 1 can 8 oz
    1/2 tsp adobo
    1 clove minced garlic
    1/4 onion
    1 tbsp olive oil

    Had me at Puerto Rican. My PR mom made these but didn't teach me anything about cooking. I will practice these - Cuban style it is! Yummy!

    Can I bake these instead if frying? How about the air fryer?

      I would say yes, everything is already cooked, so its just a matter of browning. I think it would work. If you try it please let me know how they turn out.

    Hi could I prepare some and freeze them? I made mine with leftover roast beef, and gravy grated mozzarella cheese, cheddar cheese mixed it all together and then rolled in flour,egg and bread crumbs. then I put them in the freezer hope it works..Thank you...what temp should my oil be at??

      Hi Caroline, I freeze a lot of items, but i have never frozen potato balls. For some reason i think it could work out. I have been know to microwave frozen items for 30 sec. Then i have baked them at about 350 degrees, until they start to get crunchy on the out side. Watch them you dont want them to burn. Microwaving them for 30 sec. makes them hot on the inside, yet not completely reheated or defrosted. good luck

      Hi Jessica, I made these a long time ago, when I was 1st learning. I think I might have to redo this recipe. Give it an update. I remember they were very tasty, but yes they might need more flour for Packing them together, so that they don't fall apart. I love cuban and puerto rican food.

      A Cuban or Puerto Rican inspired picadillo usually needs something called sofrito. Homemade sofrito is the best. Although they do sell it at the market in your Hispanic section, in a bottle. A way to get around it, yet still enjoy all the different flavors is by using bell peppers and onions. As shown in the Empanada recipe. The flavor is very similar.
