I don't toss it. I love the added veggies. I don't discard sofrito either. Maybe all of the aroma is already lost but I can't make myself toss it out when cooking for the family.
Sofrito is to Spain as mirepoix is to France....same concept but different, based on ingredients available in the different regions/countries around the world! Hope this helps!
