Hello, I guess your next stop is Amsterdam! I saw you both today at Amsterdam food hall. It was nice to see you in person, it would have been nicer if we could speak, but I was in a hurry.
I wanted to make a suggestion, you can try:
1. Van Stapele : Try their famous cookies which can be bought along with cute tin box
2. Van Wanderen Stroopwaffels : I found their Stroopwaffels the best
3. Maoz Vegan : Try their refillable Falafel Pita. This felt like having an unlimited Indian Thali
4. Moak Pancakes : Try their savoury pancake - The Vegalicious. Parts of it does taste like Indian fluffy dosa
You might have already researched these places, mentioning just in case they skipped from your sight. Have fun exploring!

Btw, the right way of taking the benefits of refillable pita from Maoz Vegan is: Fill the pita with the desired stuffings and sauce, finish eating stuffings, refill stuffings and sauce, finish eating stuffings and repeat until you are full. During your last refill eat the stuffing with the pita. You get only one pita and the stuffing is refillable. No one tells this, one has to look at the locals way of eating and understand 😀 Not everyone eats this way, but this is completely allowed.
And if you plan to go to the cookie store, it is best to be there early, one has to stand in the queue for a minimum of 20 to 30 min for their turn to shop.
