So do I. Just look at the NG episode "Relics" and this one and you can see that the original designs are perfectly good. Everyone knows what the 23rd century looks like and SNW isn't it.
The problem is that Trek 2009 did exactly that. Their unis are very close to the originals, so SNW's production team probably thought they needed to do something different
Regarding the fighting style of the original Star Trek scene. This was during the heyday of the tv western. Star Trek was originally pitched to tv execs as a “Wagon train to the stars.” So naturally, there needs to be a bar fight in a saloon with roundhouse punches.

Somehow I have never managed to see this episode of DSN. I've heard about it and seen tons of clips, but I missed it on air. I missed a lot of episodes in the middle of the series, but it's probably the only one I really would like to see at this point. It's the most blatant acknowledgement of TOS still being canon after the Next Generation debuted until that late episode of Enterprise. Then it all went in the dumpster with JJ Trek.

As much as I enjoyed Tribbleations, I think it woulkd have been much more fun if they included the music cues from the original episode.
You can see the passion in the old trek makers that what they were doing would be legendary
