Just did some on the 26" Weber kettle last night . So delicious. Was raining so no water in the XL basket . 5 hours no wrap and 3-4 spritz times. 250° 4 chunks of Apple ..full size rack trimmed off flap and thin end to save.
You made those exact ribs for me (with slightly different rubs and no Harry Soo sauce) the first time I came over. WSM with the B.A.D. Never fails. Lol
Hi T-Roy, hello all the way from South Africa! I’ve been binging your WSM videos for weeks now, you need commission from Weber, I’m saving up to get me one and it’s all thanks to you! Would love to cook with you someday, if I ever find myself in Texas! Thanks for the awesome content!
Thanks T Roy, you taught us Aussies well. I haven't failed for a long time since I watched your videos. Last brisket I did in the WSM was perfect thanks to you. Those ribs looked fantastic, I'm trying this for sure. Thanks mate you are a legend.
Thank you very much Peter!!! I have lots of fans from Aussie Land and I appreciate all of you watching. I'm thrilled that you are enjoying some fine BBQ Down Under. Hopefully, you will inspire others to do some Low & Slow BBQ. Cheers to ya mate!!!!
Finally bought the Arbor Fabricating Basket. Yes!, it really does burn longer. Reused some coals, filled it about 3/4's with Kingsford Pro Charcoal and used some apple wood chunks. Every now and then I spritz them with Costco premixed margarita. This gives a really good bark. Burned 8 hours with a stir of the coals once. Held between 230 and 255 the whole time with very few vent adjustments. Did 2 St Louis racks. They went to 170+ before stalling then wrapped. For the first time I couldn't get them above 192. Moved them to the oven at 300, still stalled. Went to 350 and they finally went to 205, probe slid trough easy, Tender, juicy, and popular with the wife and neighbor. This morning I looked in to see what was left, good solid efficient burn, not much left. Thank you for all the great advice.
Damn I know my summer night is going right, just finished grilling burgers , drinkin a cold beer and watching the OG T-Roy cooks smoke some ribs . Thanks T-roy
Just about to purchase my first WSM and your vids. Are bang on filling me with confidence to be able to produce some really good food for the family, I’m across the pond in good ol’ UK so your reaching far and wide bro.
T Roy, I love your cooking videos. I was looking for a smoker and after watching you I got the 22” Weber Smokey Mountain. Also love your indoor stuff. The stuffed chicken breasts were awesome. Wife loved it. And please thank Karen for the Blueberry Zucchini Bread. Thumbs up 👍🏼
Love seeing these WSM videos. Ordered an arbor fab basket based on your advice (incl your discount code), thank you T-Roy! Cheers as always from Winnipeg, Canada.
Hey Hey T Roy!! I bought a WSM about 10 mos ago and have really learned a lot watching your channel here on youtube!! I just smoked a chuck roast and two racks of ribs and they came out amazing - wish i could send a pic of the finished product! Thanks for all the info and thanks for making it easy to understand!!!
We must think alike Troy. I'm doing ribs this weekend. It's been awhile for me. I'm pretty sure I would love that sauce you used. Good looking ribs brother! Cheers!
Great video Troy. I’ve never tried Gator Shake on ribs before. Tiger sauce is awesome, it is a staple in my home. My step dad never removed the membrane. I didn’t even know you were supposed to when I grew up.
I love the flavor of Gator Shake on anything I'm cooking. Give it a shot on ribs and thank me later! LOL I appreciate you stopping by Lew. Much love to ya brother and Cheers!!!!!
Those were some tasty lookin ribs T-Roy! I don't wrap or remove the membrane either. I agree with you, the membrane holds in the juices. And to the people that say "you can't eat the membrane" I'm gonna call BS on that. I'm gonna have to get me a WSM, that thing always looks like it does an amazing job. Keep up the great work brother and cheers to ya🍺🍺
Hey Troy good to see an old school T-Roy Cooks video. You got me started with my WSM watching your videos years ago! You better feed FIFI as she wants some ribs! Have a great weekend brother!
It's a real pleasure watching you do your ribs your old school way on the WSM. They looked almost to perfect to cut into with that great sauce job. Thanks T-Roy!
Just tried the Mango Habanero Rib Candy today for the first time on some baby backs I smoked on my Weber MT - AMAZING !!! I did one rack with the rib candy and one with Tiger Sauce. The Tiger Sauce was so good, but that rib candy was something else. Thank you for sharing all your great videos - hope to see more soon !!!
really enjoy your videos- we got a WSM and i've been having a fun and delicious time with it. Your videos really helped me to learn to slow cook and have made some bomb ribs!!
Got that mango habanero rib candy last week. Was a hit with all the friends and family. Everyone said it was the best ribs they ever had. Thanks for the suggestion brother!
New to smoking meats Your videos are an amazing well of knowledge Got me some ribs the other day and used some of your tips And they turned out pretty sweet Thanks and keep up the good work
I just did 2 cooks of Saint Louis and baby back ribs In the Webber Smokey Mountain Using lump charcoal I think it was blue's hog lump charcoal. I was able to keep the temp steady at 250゚F. I wasn't sure I could do it but it worked beautifully the key I believe is having water pan in with water, not leaving the lid off to long and I also only had one vent open about a quarter or less on bottom, top vent was fully open.
Thanks for the kind words brother!!! I do enjoy the longer format "How-To" videos myself and they do pretty well for me, so I may do more of them. Cheers!!!!
Just subscribed! Watched a few of your videos and it's about time! I'm new to smoking and made a mini WSM to see if I'd like it...I'm totally hooked. Like how you break down your entire process. Thanks for the videos and keep up the great work for us newbies trying to up our game!
Hey bud, I've been watching your videos for several years now. Your videos are actually what inspired me to get my own 22" WSM about 7 years ago, was just using my Weber kettle to smoke, but I absolutely had to get a WSM after watching your videos. Amazing video as always, but I gotta ask, where did you get that basket?? I've got to get me one of those !! You had me at longer cook times with it. Keep up the amazing work, smoking some ribs and a whole chicken as we speak, so I'm sitting outside smoking some meat, drinking a cold one, got my feet kicked up, enjoying this warm, sunny weather, and watching some of your videos as I cook. Not sure life can get much better 😁
Thanks for another great video! I've never done ribs without a wrap somewhere along the way mostly worried about them getting dried out but this seems to have worked. All the best and I must give this a try. Cheers!
Love this old school rib cook on the wsm Troy. This kind of video reminds me of learning how smoke RIGHT from your previous videos years ago. Hope your doing well Troy
Awesome video, T-Roy! I love my WSM 18" so much that I just bought another WSM 22" today. Can't wait to try out some ribs on it. You are a true inspiration when I cook on my WSMs bro. Keep up the great work... shout out to the Side Side! 😅 Great looking ribs my man! 🍖
Man T-Roy those ribs looked awesome love the layers of flavor. I was one of the lucky ones to get one of the bald buck slow burn and it is great stuff. Thanks for sharing last video to allow me to get a bottle
Hovdy brother! Doing sone St louis porkribs tomorrow, so i needed a brushup on how to do *em on my WSM.. You set the standard you know.. lol I wil make a video of it and i will do my take on the barbeque beans you shared a fem yrs ago.. Mama Jean i think it was.. correct me if im wrong.. Hope you and yours Are doing good brother.. Cheers my man! Kjetil
I have done that Mario. I think James and I did a 3 part series testing water, sand, and nothing in the water pan a few yrs ago? Cheers back to ya brother!
T Roy! glad to see you are still making new videos! Are you bbq'd out though? Seems like you aren't posting as many videos these days compared to years past. please post more videos! can you maybe get your hands on one of the pellet lsg cookers?
I appreciate the kind words Casey. I'm slowing down because I will be doing lots of traveling pretty soon and won't be able to make videos as often, so I'm just slowing down now so fans can adjust to the change. I do try to put up vids every 2-3 weeks nowadays. Hope you have a wonderful summer!!! Cheers!!!!
@@TROYCOOKS ok I used my arbor fabricating pit during the 4th of July. I made a pulled pork. I forgot to comment on it. The pit really helped me keep a steady pit temp. I ran 230 degrees for the cook and bumped it to 250 the last hour. Total time was 9 hours. What I really liked about that pit vs what comes with the WSM 18.5” is the amount of fuel that doesn’t get wasted during the cook. And the ability to control the pit temp. With the original set up out of the box the holes are larger and the temp swings are annoying, you have to constantly watch it. Using the arbor fabricating basket, I had no problems. The coals burn evenly. I couldn’t be happier with it! Thank you for putting up your videos!! Saw you cook with it and I had to grab one for myself!! cheers buddy!
Troy cooking on the WSM is like a warm pair of well worn slippers and the perfect cup of coffee! Great job Brother-Troy!
Hey Greg, I appreciate you swinging by brother!!! I love cooking on that WSM!!! Cheers to ya!
does your river country thermo gauge have a 4 in ch stem?
Just stopping in to get a refresher from T-Roy!
Funny you say that! Sometimes I watch my older vids to see how I created such masterpieces too!!!

Wow! Beautifully done! Love that use of the Tiger sauce too! We can get that quite easily where we are, but never tried on ribs. Brilliant idea!
Hope you give that Tiger Sauce a try on some ribs. It's great on beef, pork, and I also marinate my shrimp with it. Good stuff!!! Cheers to ya!
@@TROYCOOKS Yes! But like you say, be careful not to cook those shrimp in it... like a lot of marinades, gotta keep them quick with shrimp! Thank you!
Layers of great flavour on those ribs, and they are ultra tender. Cheers, T-Roy! 👍👍✌️
