Not neccessarily true. There are VFDs for single phase motors but must use a split capactitor, not a switched starting capacitor. In essence for the motor shown... it is magic... he got it to run very well.
An induction motor is slipping all of the time away from the applied AC frequency. (a synchronous motor maintains RPM based on applied Frequency). If you apply more and more load to any motor the load amps go up until it reaches a "Locked rotor amps" condition if it is not protected properly . Look up "Speed no load" @@ajarivas72
