How do you critique perfection? Seriously, to me, you are the best cooks’ show bar none. You give us perfected, fool proof recipes, test kitchen equipment and then do tastings of all that is good in the food world. Your presenters Julia and Bridgette are way kewl, extremely knowledgeable and fun and are so compelling, the show is over before it begins. Today’s recipes were no exception and answered a lot of questions I had about ham and potato mashers. A really all encompassing program every foodie should watch. A great big thank you from Colin, a true, blue loyal fan. Long may you prosper!
I made your exact recipe Weber grill and all. All I can say is it’s the BOMB 💣. I’ve been smoking pork butts at home for about 25 years and it’s good however, Your recipe is perfection. The skin cracklings take it over the top. You can’t buy this bbq anywhere!!! I’ve tried them from a dozen states and nothing comes close. Well done 👍. I ate three sandwiches back to back. Incredible 👌
I will definitely make the smashing potato salad. For me, it with 2 pieces of brown bread and a glass of ale would be a quick dinner from heaven, and I can make several servings of it in one batch and share it spontaneously with friends.
You gals are so funny...like working with your best friend. While the show is informative and delicious 😀, it's a pleasure to listen to you both and well, everyone on the program.
@@itburns5756 Correct. Mustard sauce is in the midlands of SC. It was developed by the German immigrants of the region. Vinegar and pepper is from the Piedmont region of South Carolina. The up-state of SC has its own sauce which is tomato based and the lower upstate is ketchup. www.southernliving.com/bbq/south-carolina-barbecue-regions
I absolutely LOVE pork! I hear ALL the reasons why people DON'T eat pork... IT MEANS NOTHING TO ME! BACON, HAM HOCKS, DRIPPINGS, CRACKLINS, LOVE'EM!!! 🐷🐖😋👍
In Norway, we will slice the skin into squares to allow the fat to render more easily. The crackling have to have fat. And it will be salted on the fat side and eaten.
2nd time making this exact recipe. It’s the bomb 💣 especially when you can buy this cut for around 1.69 to 1.99 pound. around here in Indiana it’s called “half picnic”. This recipe is so simple and juicy delicious you don’t need any sauce whatsoever.
Would you have to refresh the coals during the grill time for the pork? Looks amazing, and it sounds like these hit the right balance of sour (for me) and sweet (for my husband). Will have to find a time to make these. Thanks for sharing!
I should want shank pork Roast Stuffed with all the right veggies looking forward to it because I would like to cook this for Thanksgiving or Christmas
What u call a potato masher is called in my household a bean masher it what I use to make my refried beans and the holes do o a better job then the wave.
I've never been a fan of potato salad, but after seeing your recipe, I just might like it! It would have to be me making it according to your recipe, of course!
I much prefer sliced over chopped...place SLICED PORK ON a hamburger bun with ..lettuce ..TOMATO..mayo....PICKLE SLICE...with a added dash of Texas PETE..MY FAVORITE ROAST PORK SANDWICH
Are there different kinds of Yukon potatoes? Sometimes I see gold or yellow potatoes. Some don't taste very good or something is different. Maybe a video on the different types of Yukon or gold potatoes?
I know this is a 2018 show but COME ON!! Aaron Franklin of Franklin's BBQ in Austin Texas needs you to visit him. Bryan you can learn about real TEXAS BBQ.
I love the smoked ham it looks wonderful. I am not a big fan of spiral cut hams. For me they always seem dry. On the potato salad in my book you have to have sliced radishes. They're a game changer.
Hey ladies and workers. I wondered what happened to your fearless leader, and now I see he's hobnobbing around the world eating. I guess he's having a really good time! 😎🤩🕺 and I want to say that I think you're doing a fantastic job! Well done.
South Carolina doesn't do everything right about sauce. If you got to cover the meat with sauce you made a mistake cooking it. I don't hate it by along stretch so I will eat it any time. Gosh these poor people must never have tasted Virginia or Kentucky hams.
I don't care for their tests of store bought items because most of the time they are east coast only items.....most of the country has never heard of most of the brands......all the spiral cut hams we see are so thinly sliced that I won't even buy them...I go to the deli and tell them which setting to use on their slicer...
Picnic vs butt should have been part of the discussion. Sorry to put in a less than positive comment even though the whole presentation is outstanding!
I love y’all. I don’t usually disagree either.... but....Do not put sweet pickles in potato salad. I eat all kinds of potato salad and there are few I don’t like. Save sweet pickles for the deviled eggs if you must. Or just eat them alone. Also don’t put cayenne in everything. Stop with the cayenne. I can’t eat it and potato salad doesn’t really need a kick
Looks great but I'd love to hear about the other Carolina sauces, the mustard doesn't appeal. I'd also like to have seen a dirty rice recipe to go with it. This always seems like real people cooking real food though. I'm a big fan. Many of their recipes can be relied upon.
Soaked chips are worthless. Just throw a few chunks of hickory to the coals once it hits 140 degrees it has taken as much smoke as possible. Then move on to the next steps.
JamesJ Fisk Wild guess, you’re not a mid-westerner? As a kid, our neighborhood had many ethnic groups and probably a half dozen variations of potato salad (at least) from each. 50/50 on hot versions and cold ones. Loved them all. Mostly exposure shapes likes and dislikes.
Protocol Officer Ummm, couldn't be further from the truth actually. I suspect this is a regional issue as I am from NYC and you sure as shit don't see egg potato salad in most places, but you see it elsewhere. I'm entitled to think it's gross, just like you're entitled to like it...
JamesJ Fisk OMG yes! I totally get what you're saying. My grandmother from Germany always made warm potato salad and that is the only one that ever made sense to me hahahaha
I still love ATK but the format is starting to reming me of a light night informercial. Juliette needs to calm down, just talk naturally. Sorry two more things... Change up the intro, you are always walking into the camera on the porch, Whats with that? Lastly, Get some diversity on this show already! its 2018.
don poulsen You sound like someone who is bored. We in the real world call those like you “TROLLS.” If you don’t like the content and the intro, don’t watch! As far as the diversity goes, I’ve seen Black. White and others of multi-ethnic back grounds as presenters. In other words, I think you are a “TROLL!”
The show is filmed in Rupert, Vermont which has a racial makeup that's 99% white. I don't see the point in pushing for more diversity if the show is representative of the area. I don't imagine that they deny people of other races job positions, they likely just don't receive many.
but stastistically, since there are more white people than other ethnicites in the USA, its hard to find the people you mention, who also are better than any white applicant
Julia seriously needs to chill with the popped collars. Her obsession with fake laughing and popped collars makes me think she's a serial killer or something.
@It Burns Julia is alright but watching her is painful and distracting. Why does any regular human being thinks that you are supposed to pop collars like that for? I would prefer Bridget was the one who got a much bigger percentage of the screen time.
Does the insistent guitar strum cut screen drive anyone else a little crazy when watching this? (Note to editor, change it up for the sake of the viewer) Please :)
Absolutely nothing here I would want to prepare .... It's all sour ..... I'm from the Carolinas .... And I have never had a great so called Carolina barbecue.... Most people spit it out! Most are disappointed! Pig roast? Yea! And then it is slathered in vinegar! Yikes! Who would ever make that nasty potato salad? Your facial contortions said it all ....thumbs down on this episode! I do not see any food chains promoting these two recipes ..... They would go out of biz Ina snap. Are you kidding me ..... We need a review for a potato masher? LoL! Please give us a list of all products you tested! Some yes? Some no? Explain! Someone is rolling the weighted dice!

My dad and sister have always cooked their pork bbq that way. Its not new for us. We are in North Carolina. No mustard sauce though. Looks good.
+Sandra Sutton Yes, but in NC it's either whole hog (east) or pork shoulder (west) which was shown @2:04. And definitely no mustard sauce!
Tosh T
So mustard sauce is only used in SC?

Picnic is front leg. Ham is back leg
The fresh ham looks fantastic and I will serve it to my visiting German friends next month. Along with the potato salad. A great American meal. Thanks

Dear America,
You're welcome!
Sincerely, South Carolina
Skip to 20:35 to hear about the "mashing action" of a generously sized pink utensil.
The bone would be good to make split pea soup.
I should want shank pork Roast Stuffed with all the right veggies looking forward to it because I would like to cook this for Thanksgiving or Christmas
Elain Jones go for it! It can only be good.
You commenting from 1863?
I love these girls....ITS A GREAT COOK SHOW...NOW..!
My family, who are Tennessee mountain folk, have made our potato salad this way for at least 4 generations💗
What u call a potato masher is called in my household a bean masher it what I use to make my refried beans and the holes do o a better job then the wave.
so ironic salting the pork leg with kosher salt.
I've never been a fan of potato salad, but after seeing your recipe, I just might like it! It would have to be me making it according to your recipe, of course!
Holy Toledo, Batman. That pork looks freaking delicious!
Bridget is fantastic.
I just love you guys.
Yeah love going to Hite's BBQ they have been around a long time
It was said that a hog all ways lays down on its ride side..making the ham on right side tougher....don't know if this is true..but I did hear this
South Carolina's nickname is the Palmetto Bug.
Love allyoure recipes
If you soak the onions in the pickle juice, they become delicious.
Julia , is that her name at the beginning? Has the best job! Tasting whatever is cooked!
Oh it's Bridgette.
I much prefer sliced over chopped...place SLICED PORK ON a hamburger bun with ..lettuce ..TOMATO..mayo....PICKLE SLICE...with a added dash of Texas PETE..MY FAVORITE ROAST PORK SANDWICH
Looks so good
I need this sandwich!
I'm going to try yalls method for the ham but mustard sauce on bbq in eastern NC is sacrilege 😂
You two bring variety and joy to my life and add to my cooking repertoire. Thank you.
Great job ladies!
As a South Carolinian, this vid made me laugh. You absolutely did not learn this at Hites BBQ. “Smoked ham”. 😂😂😂
Are there different kinds of Yukon potatoes? Sometimes I see gold or yellow potatoes. Some don't taste very good or something is different. Maybe a video on the different types of Yukon or gold potatoes?
ko ko
I don't think there are different kinds. They're either Yukon Gold or they're not.
The grocery stores try to pass these as yukon gold.....Yellow Finn, Michigold, Donna, Delta Gold, Banana, and Saginaw Gold
What's different between sweet pickles and sweet relish?

For all you who don’t know PERNIL IS the same meat only seasoned differently.

That was beautiful..😖👍
SOUTH KAK!!
Give you the thumbs up but Zero mustard needed.

I’m sorry but i think the creaminess might be from the Mayo xD I’m not complaining though

I'm hooked on vinegar and red pepper type sauce..
Mustard based; Vinegar based; Ketchup based; Spicy mustard based
Soaked chips are worthless. Just throw a few chunks of hickory to the coals once it hits 140 degrees it has taken as much smoke as possible. Then move on to the next steps.

No. I like soaked chips. Throw YOUR thing out
I make ham like this on my homemade somker and the skin turn out nice n i dont put the ham in the oven are u I rookie at smoking meat bro
That potato salad is a full out abomination. Thou shalt not be forgiven.
Jeff McLendon This is why I can’t stand potato salad
Why do people have to ruin perfectly good potato salad with hard boiled egg... ick

I've never understood potato salad at all. I realize I'm part of a small minority, but eating cold potatoes has just never appealed to me.

Tat potato salad is soooo sad! AWFUL!
No bbq grill temp or ham temp you want on the bbq. Boo
You're just adding smoke on the grill, most of the cooking happens in the oven. Smoke temperature doesn't really matter for this recipe.
