I remember the story "The Five Rings" Musashi Miyamoto who was the best samurai in Japan retired and took up painting. He passed down his wisdom in his writings. Even if it's trapped it's at least knight for a rook+pawn.
As someone not great at chess at all, could anyone explain why white would not take the queen with his horse at 2:05? Wouldnt this force Hikaru to trade queens, and then white could take the tower on H8 on the next turn for free?

No it's not mate at all bcs the bishop from g4 takes the queen and the rook with the knight is not going to checkmate you on the second file while your opponent is a queen up bcs worst case scenario he sacks the queen and he's a piece up.

If you put a pawn next to your opponent pawn (moving it 2 squares), he can capture it because it's like moving it one square (where he can capture it) and then another square (when it's next to it)

When it's your turn, put yourself in your opponents shoes and ask yourself what you would play, if it were his turn again. Can you take a piece for free? If not make a move that attacks something of his. There's a good chance he wont notice it's attacked.
