We don't eat butter, so i used olive oil and thickened the "sauce" with a little vegan buttermilk, which made the dish extra creamy and lightly tangy. Topped with freshly grated parmigiano and fresh herbs and perfetto! Chef's kiss! Thank you for your public service, Noah! 🙌🙌🙌
Years ago, my grandmother came over & put this exact dish together for dinner, after I said there was nothing to cook so I'd take her out to a restaurant! I have made pasta with brocoli & red pepper flakes & parmesan so often since then! (Grammy was born in 1900 in Foggia & could conjure a family size meal out of thin air!)
