way back in the 70's we used to live in a tenement building which we didn't have a good refridge & stove we used to take our turkey to the local chinese restaurant & let them roast it for us with a small fee, and the result is ooh la la my butterball. anyway, happy post thanksgiving!

My fathers recipe - a scottish chef of many years - stuff cavity with a stuffing of your choice, make a quick rosemary butter and apply that under the skin, cover the turkey with bacon - then cover bird with foil - place in oven at 350 degrees and cook for 20 minutes per lb of meat + a further 20 minutes basting occasionally - to check the done-ess cut the bird at one of the joints, the juices should be clear. Rest for 30-45 minutes and serve.

Ive only cooked whole turkey once. I tried the best to find a recipe that is really juicy. Ive read alot that the white meat mostly likely will be to dry. So a good gravy is a must. Well. It was too dry. But the 2 drumsticks were just perfect. So juicy and tender.
Matt I love your family life vlogs. I was just thinking how different your life is now since January 2020 (and a bit before) when I started watching you... not in a bad way just different way.
Here is the secret. Stuff the bird with lots if herbs. Parsley, dill, Rosemary, thyme, lots of cracked garlic cloves, couple of lemons cut in half. On the outside, cover completely with strips of bacon. Cook back-side down. Don't cover. Traditional bread stuffing cook separate. You'll never go back.
All in all it was a great thanksgiving. The turkey, well it could have been better, I think you guys started the oven too high. About 320 or 325 would have been better because it was a slow roast. I would have marinated it with salt and pepper, some dill and lemon juice. Covered it with melted butter and put slices of lemon in the belly, but not too much just about 5 slices. The fact that it was dry is because of it being over cooked and not if it was belly up or down. The rest of the food was exellent. Cranberry sauce is a must. Happy thanks giving.
I fully understand channel has gone a different direction however with your unique perspective on China and of course still with family there would like to see some videos regarding the protests and the ongoing Covid situation and what it has done to life in China and where this is going. Just a suggestion. The zero tolerance is not working from all reports.
