- 4 Cups all-purpose flour (512g)
1 3/4 Cups sugar(351g)
2 Cups Margarine (454g)
11/2 tsp Butterscotch extract
1/2 tsp Vanilla extract
1 tsp Lemon zest
1 tsp nutmeg
1/2 tsp salt
11/2 cups dried mixed fruits(225g)
21/2 tsps baking powder
10 eggs
1/4 cup brandy
2 tbspns Browning
2 tbspns Black treacle
This recipe shows you how to make a delicious Nigerian wedding cake. Those light fruit cakes that people look forward to at weddings.
This Nigerian wedding cake recipe is always a hit.
The mixed fruits can be pre-soaked in Brandy up to three months in advance or they can be used dry.
The cake can be soaked in Brandy or Rum to preserve it as any alcohol added to cake batter before baking will not act as a preservative. It will leave the cake with a richer flavour though.

•Can I replace 1/4cup of Brandy with Orange juice?
•if I soak the fruits with Orange juice, Is there a need to add the 1/4cup of brandy/orange juice?
•lastly if soaking the fruit what amount of liquid should I use ?

Yes you can replace Brandy with Orange juice, but the flavour of the cake will be different, as the Brandy lends its own flavour to the cake. Yes, put it still. The amount of Brandy/juice you soak them in will depend on the quantity of fruits you are using. Put the liquid to cover the fruits. I hope this helps.

Can colours be added to the mixture?
It can last 4 to 5 days, Longer if frozen. They can, but there's no need for that as the colours may not come out the way they are supposed to. It's better to use colours in a light coloured batter.

It depends on the size of pan you want to use and how high you want your 1 tier cake to be. Don't divide the measurements. This batter can give you a 10 inch cake. I hope this helps.

I like baking mine two to three days before a wedding, depending on the types of design I'm doing on the cake. If you plan on feeding it with alcohol then you can bake it way ahead of time. Thank you.

Black treacle is sold in baking shops. If you don't have it, you can replace it with browning, so you increase your amount of browning.
Why didn’t you add milk?
Milk makes cakes go bad faster. Since it's a wedding cake that would most likely be kept out longer than regular cakes, I omitted milk. Thank you.
