That's Cajun jambalaya, the one most people know it is the tomato based Creole jambalaya of New Orleans

Filé gumbo. Dried, ground up sassafras leaves added to gumbo as a thickener/flavorer.

Many people outside the US are familiar with the US in movies .. which is mostly not real. For an episode like this it would be nice to show some clips of where the food is from .. of the land and people who are not Hollywood.

Shrimp is haram in some Muslim traditions; it’s not kosher either.

I decided to have a nosey and it looks like it’s mostly down to what school of thought the practitioner follows, as prawns were considered fish when the rules were first set out, but scientists have since determined they’re not fish; furthermore, they’re not considered predators like crabs are. Some folks go with “Well, original law says it’s okay, so it’s okay”, some say “It’s a grey area, so best not, but it’s not straight up law breaking”, and others avoid it entirely to be safe given modern definitions of fish. That was a fun research rabbit hole!
