  • This Japanese-style spaghetti dish is so easy to make. You’ll be surprised at how good it is.
    INGREDIENTS (makes 1 serving)
    3 perilla leaves
    3 umeboshi (deserved and chopped)
    1/3 chicken breast
    Salt
    Pepper
    Cooking oil
    Spaghetti (1 serving)
    Water for boiling
    1 tbsp olive oil
    Nori (cut into thin strips)

    Hmm. That's a very good combination of flavours. Shiso and Umeboshi are really "best friends" and adding olive oil to something so typical Japanese is a clever "twist". To make it easier to distribute the ume paste evenly you could mix it in the olive oil first - but maybe it is even better to have it not so evenly distributed so that you have distinct ume accents. (Since I am vegatarian I will replace the chicken by smoked tofu or seitan - not the same but maybe worth a try...). Thanks for this video as always.

    I got some tanenuki umeboshi from the Japanese shop last weekend, so I'll make this version of pasta for myself (minus the shiso - hard to find out of season here) and Shinichi's tuna mushroom pasta for my fiance. Thank you for the wonderful recipes!
    I really wish you guys would make a 100% Japanese-language channel for those who wish to keep up with language skills; maybe as a Patreon membership level benefit thing?

    I would like a video about ways to use Nori. I know a few, but I'm sure Satoshi will have many great ideas.
    Uses for leftover rice would be a great video too!
    I really liked the miso soup video. It inspired me to be more creative with my miso soup.
    I would love a gadget video too!
    I think I would have loosened up the ume with a little bit if the pasta water to make it easier to mix. Looks tasty!

    Shiokoji is pretty easy to make at home or buy off Amazon.
    It cask be used to add umame to alot of things. I make a salad dressing with it. So I'm happy to try it in this dish! Thank you!

    When I first visited Tokyo last year, umeboshi was served for breakfast every day at the hotel where I stayed. I didn't like them on their own, and I didn't think to pair them with anything else. Because of Satoshi's series, I can't wait to try umeboshi again when I return to Japan in a few weeks. Hope there are other single ingredient recipe videos like this coming soon!

    Yes Love Satoshi's idea's how to use a basic Japanese ingredient. Shio koji recipes would be great, as well as yuzu kosho. Perhaps shiso leaves as well :) Yes!!!! new gadget videos ❤️❤️❤️ you know I love the 100 yen shop hahaha does the pasta cooker work? I've seen it many times but wondered how well it would work and if it works with the spaghetti available in the Netherlands. This recipe looks delicious! Especially when it is getting hotter I think. In the summer heat ume helps to recover your salt level.

    That's how I put my spaghetti in the pot too!! The twist helps it to spread out evenly, and then it will fall into the pot neatly, helping it to not stick together. I think I learned it from Jamie Oliver?

    Wow guys! Satoshi this looks so good, I love the pickled plum and have always liked them, I eat them with rice and hot water, so good, I grew up eating them, so this recipe is going to be one I will try, I wish I could find the parilla leaves here in the US, I guess I will have to substitute them with green onion. Maybe when I go to the Oriental market I will look for the parilla leaves. Thanks so much for a tasty looking recipe and I really enjoy these cooking videos, so please do more. Bye for now.

    Have you tried fried spaghetti?
    I first descovered it at Spaghetti Station in Anaheim, CA.
    Near Disneyland. (Now gone😭) Such a wonderfull place! Interior was very rustic old west. The deviders between the rows of seats had hundreds of old western pistols. At the entrance there was a real Nickelodeon! Put in a nickel and crank the handle and you'll see the original movies (through the viewer, you see b&w picture cards flipping as you crank. Faster you crank, faster the movie goes.
    All over the walls, there were so many old western memorabilia like indian headdress, buffalo head, gatling gun... I know...😖
    The old west was crule and down right fked!
    But that was the past. The food was so amazzzzzzing!
    OK! I digest & digress.
    Cook spaghetti noodles, just under cooked. In a large fry pan put much olive oil and several/many crushed and minced garlic.
    Almost a minute, put in the noodles and sprinkle LOTS of parmesan cheese and stir till some of the pasta is brown.
    Buon appetito!
    Ugh... Yummmm✌😆👍

    I love umeboshi! I have heard people make umeboshi tea. I tried this by adding boiling water to mashed ume. Is this correct or is it prepared differently. I liked it!

    is dashi powder just another word for msg?

      Well in Japan they sell the two separately. MSG looks like salt, Dashi stock is either whole pieces boiled or ground ingredients that naturally contain MSG, such as seaweed. Bonito/sardine/other fish, mushroom, etc. so the flavor is different depending on what Dashi stock used, but all are a little different from plain MSG crystals.

      instant dashi is basically just powderized bonito and kombu

    It looks a little dry. I may have added some pasta water to create a sauce.
