I do strawberry rhubarb - I started with 3 1/2 strawberries to 1/2 cup of rhubarb (cooked separately til very thick) - I use Garden Fare that only uses 1 1/2 cup sugar for 4 cups berries - I am up to 3 strawberries and 1 cup rhubarb -stretches your strawberries and makes it less sweet. Really love freezer jam

@@booswalia I have a dehydrator and use it for most everything but I have not yet tried to dehydrate my strawberries. I guess what I was asking is, do you do anything special other than clean, cut and place on the dehydrator mat. Thanks for answering!! Hugs
I remember when freezer jam came on the scene. After the first time Mom made it, we never went back to cooked Strawberry Jam. You can make it out of frozen berries, but it takes up less room in the freezer as jam.

The combination of the berries, the pectin, and the sugar should affect the way the jam freezes, the structure of the crystallization. As long as you use proper mason jars, and leave enough space at the top, it shouldn't freeze. It's possible that there is a way to make it without sugar, but that wouldn't interest me personally. Aside from the flavour, sugar is a preservative (www.sciencefocus.com/science/how-does-sugar-act-as-a-preservative/) so in most cases, without a certain amount of it, your jam will go all nasty while it sits in the fridge.

You mentioned having 2 or 3 types of jam including marmalade on the breakfast table. Do you have an easy marmalade recepie? I love and crave marmalade during winter for some reason. My kids don't like marmalade whatsoever.
The flavour of the marmalade is really affected by the type of oranges. Seville oranges are best IMO. Marmalade is fairly easy to make - perhaps I'll do a vid on that sometime soon - but you have to start with really good oranges.

I don't use the liquid stuff because I think it's a ripoff, so I can't give advice on how to use it other than the follow the instructions. Another great way to store strawberries is to dehydrate them. Nice to snack on or put on your cereal in the morning.
I have never dehydrated strawberries before, how do you do yours, thanks so much!
I use a dehydrator. A must for gardeners in my books. Great for making powders like onion, garlic or tomato powder.

Just slice them evenly and spread them out so they don't overlap.

You put glass container in freezer My mother use to put some in freezer bags so it takes up less room then put in jar when putting in refrigerator
