  • Many enjoy a warm stack of fluffy pancakes covered in syrup! In this episode, we share two veterans’ accounts, one confederate and one union. They describe making pancakes, or as they called them, slapjacks or flapjacks. These might be a bit different than what you might enjoy today since soldiers often had limited ingredients! Thank you to the Waterloo Area Historical Society for providing the location for this ration episode.

    "Proof that if you take just about anything and fry it in bacon its gonna be pretty good" Lol. Awesome Will! Great video. My son and I did this with our hard tack ration. It softened it inside and made it crispy outside and tasty just like bacon!

    I remember reading about a couple men from my 4th-great grandad's regiment (Fourth Iowa Cavalry) who got captured by Confederates after going out to find a frying pan for making flapjacks. One made a harrowing escape by stealing a Confederate officer's horse, while the other spent two long years languishing in southern POW camps, like Andersonville. All for a plate of pancakes.

    The after effects of the civil war can be seen in the fact that the South has WAFFLE Houses
    While the North has International Houses of PANCAKES

    Good job guys, in my mess we do the same thing using corn meal, it's also very good to mix a little flour in with the corn meal if you have it.

    One thing that for Confederates that guys might have had would have been sorghum/molasses for them.

    Couldn't you have patty-caked the slapjack dough with your hands ere putting in the pan as to make it more flat?

    It looks like you guy’s are making heavy fried bread, should the batter be almost in the state of pan cake batter as to almost pour it, they are called flap jacks / slap jacks. Is this how the instructions are interpreted.

      Possibly, but fireside with the tools at hand it would be a lot harder to deal with.
