If you add them from HACS, they will have a little yellow/orange icon on them that says custom integration (similar to the icon that says "depends on the cloud" in the bottom right corner of the integration on the device and services page --> Integrations) - thanks for watchine.

if you go into the frontend mode, click the plus symbol (explore and add repositories) in the bottom right corner and search - it should show up there.
You can add custom add-on repositories they just aren't available through HACs. If you go to add on, then add, click the 3 dots at the top left, you can add custom repositories. I've got the deprecated ADB server in there. It was deprecated 4 years ago but works with zero issues.
Because the creator got tired of everyone asking how to install add-ons with HACS. Some people still think you can use it to have add-ons instead of the custom integrations. It's usually the people who don't have the OS version of Home Assistant and want add-ons and don't know how to create the "add ons" with Docker, Proxmox, TrueNAS, or any other methods.

How did you install kiosk-mode in HACS? It does not show up in search on HACS for either integrations or the front end.

Hacs' add-on option is super annoying. They need to let you remove that. Also no notification dot/number with updates from hacs. 😢
